These butter pecan bites were a total experiment.
I had absolutely no idea what exactly I wanted to achieve while I mixed the ingredients for this recipe.
I just threw a few things together that worked well together before and I was pleasantly surprised when I took my first bite!
Turns out this recipe is a big success –
a happy little accident if you will.
Sometimes I’m super surprised by how some ingredients just work together.
The chocolate you can see in the photos?
I added it only for the photos and not because I thought it would be essential for the recipe.
Turns out again, the combination of these butter pecan bites with the sugar-free chocolate is awesome and I highly recommend it to you as well.
And I would have never known if I wouldn’t have mixed stuff mindlessly in my kitchen.

KETO BUTTER PECAN FAT BOMBS INGREDIENTS:
(You can find the exact amounts needed on the recipe card at the end of this post!)
you can also use normal granulated erythritol for this recipe if you don’t have brown erythritol at home but I highly recommend to use brown or golden erythritol.
It adds a malty and almost “caramel”-like flavor to the bites and I personally really enjoy that.
I got my brown erythritol from a local brand in Germany and unfortunately, it’s not available in the US.
I haven’t tried both of the following products myself but the reviews are very good so I feel confident in suggesting them to you:
1. Golden Monk Fruit Sweetener
(I really want to try monk fruit sweetener myself but it doesn’t ship to Germany!
Hopefully, I can get my hands on it when I’m in the US next year.)
2. Sukrin Gold Brown sugar substitute
(This is pretty close to the product I used but it differs in the fact that this is a 1:1 replacement for sugar whereas the erythritol I used is only 70% as sweet as sugar.
I adjusted the amounts you would have to use if you use a 1:1 replacement in the recipe card!)
Why do I love Erythritol so much?
In my opinion, Erythritol is the BEST keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of its natural origin and natural production process (fermentation with a special kind of yeast) I also consider erythritol to be paleo-friendly.
Even though I’m a little bit biased towards erythritol, I’m not discriminating against other granulated keto-friendly sweeteners that won’t spike your blood sugar.
But you should be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
I adjusted the amounts in the recipe card for 1:1 sugar replacements as well, don’t worry!
HOW TO MAKE KETO BUTTER PECAN FAT BOMBS:
1. Melt the butter & mix with the remaining ingredients:
Melt the butter on low heat in a small pot or in your microwave.
Add remaining ingredients and mix thoroughly.
Make sure all of the pecans are fully covered.
2. Chill in the fridge:
Add the butter pecan mass into a suitable silicone mold and chill in the fridge for at least 1 hour.
I simply used the silicone mold I usually use for my keto candy bars and cut the keto butter pecan bars into bite-sized pieces afterward.
I don’t recommend to use a hard plastic mold (like an ice cube tray) because it won’t be easy to get the solid butter pecan bites out of the mold.
A way around that could be to freeze the keto butter pecan bites and get them out of the mold that way but I wouldn’t recommend that as it may affect the taste.
If you don’t have a silicone mold, you can also try to pour the keto butter pecan mass into a baking dish or something similar and cut it into bite-sized pieces afterward.
3. Enjoy:
Pop the butter pecan bites out of their mold and enjoy them with a hot cup of tea or coffee!
You can also dribble a bit of sugar-free chocolate on top of them like I did, I absolutely love that combo!
Store covered with plastic wrap or in an air-tight container for up to 1 week.
Nutrition Info:
One keto butter pecan bite (approx. 0.65oz/18g) has approx. 0.4g net carbs (1.1g total carbs and 0.7g dietary fiber), 6.4g fat, 4.9g protein, and 101 calories.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
Q: How do you include Erythritol in your calculations?
A: The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
