A few weeks ago I made a sugar free keto stracciatella mousse, or for my American friends: chocolate chip mousse.

Stracciatella is a popular ice cream flavor here in Germany and other parts of Europe and it’s basically chocolate chip flavored ice cream.

It has a very rich flavor and it’s one of my favorite ice cream flavors.
After I made the mousse version I also wanted to create something that’s more suitable for the hot summer days that are inevitably going to leave us all sweating – and frozen chocolate chip fat bombs (aka Stracciatella bites) seemed like a perfect fit.

The best thing is that these little guys are ready for your freezer in only 10 minutes and you only need 3 ingredients.
Once they’re frozen they can be stored for a few weeks and thus they are the perfect treat whenever you crave something sweet on the keto diet without wanting to whip up something from scratch.

    KETO CHOCOLATE CHIP FAT BOMBS INGREDIENTS:

    This is the part where I’m sharing a few of my suggestions and tips for the ingredients you’ll need for this recipe!

    You can find the exact amounts needed on the recipe card at the end of this post!

  • mascarpone cheese:
    You can also use cream cheese but I personally prefer using mascarpone cheese.
    Both are kinds of cream cheese but in my opinion, mascarpone cheese tastes “richer” and goes better with the chocolate chips.
  • sugar-free chocolate or chocolate with at least 85% cacoa content:
    grated into fine flakes.
  • powdered erythritol:
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Keep that ratio in mind and adjust accordingly.

    Frozen Keto Chocolate Chip Fat Bombs
     

    KETO CHOCOLATE CHIP FAT BOMBS RECIPE CARD:

    These frozen keto chocolate chip fat bombs are the perfect treat for hot summer days on the keto diet! Less than 1g net carb per bite and super easy!

    Frozen Keto Chocolate Chip Fat Bombs

    Ingredients:
     5.60 oz mascarpone cheese (approx. 160g)

    Instructions:

    Add the mascarpone cheese into a large bowl.
     

    2

    Add the powdered erythritol into the bowl and beat the mascarpone cheese for approx. 3-4 minutes until fluffy.
     

    3

    Grate the chocolate and add it to the bowl as well.

    Mix thoroughly.

    Transfer the mass into a suitable silicone mold (silicone molds for candy making like this one are ideal for this) and place the mold into your freezer.

    Freeze until solid - this can take anywhere from 3-5 hours, depending on how big your fat bombs are and what mold you are using.

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this you can subtract the carbs from erythritol completely, which is what I always do.
