This almond chocolate clusters recipe will be a rather short one – but that doesn’t mean it’s a bad one!
Sometimes, the simplest recipes are the best ones: you don’t need to have a huge list of groceries before starting, it usually doesn’t take a lot of time until you’re finished and a lack of ingredients doesn’t mean the finished treat isn’t delicious.

To the contrary, these almond chocolate clusters are a current favorite of mine – I love to snack one or two while my boyfriend and I relax on the couch in the evening.
I love that they’re readily available and keep for a long time. I made my first batch about 2 weeks ago and I’m still snacking them almost daily.
If you keep them cold and covered with plastic wrap they’ll keep for quite a while.

And if you use the right chocolate, they are completely keto-friendly!
One of these bad boys has approx. 1.2g net carbs making them absolutely harmless to your state of ketosis.

    KETO ALMOND CHOCOLATE CLUSTERS INGREDIENTS:

    (You can find the exact amounts needed in the recipe card at the end of this post!)

  • (slivered) almonds: who would have thought, right? :p
    I recommend to use slivered almonds, but you can use whole almonds as well.
  • sugar-free chocolate: if you can’t find sugar-free chocolate you can also use chocolate with a very high cocoa content (at least 85-90%).

    PALEO ADAPTATIONS:
    Depending on how strictly paleo you are, you can either choose to use chocolate with a very high cocoa content (because it contains only a small amount of sugar) or use unsweetened baking chocolate (unsweetened baking chocolate contains only cocoa butter & cocoa solids without the sugar).

  • VEGAN ADAPTATIONS:
    If you’re vegan you have to watch out for chocolate that contains milk products like whey.

  • (Optional) Additional sweetener:
    Depending on what chocolate you use, you may want to add a little bit of additional sweetener.
    I used very dark chocolate with a cacao content of 91% for this recipe and I knew the chocolate by itself would be a little bit too bitter for me.
    I added approx. 1 1/2 tbsp of erythritol to my almond chocolate clusters.

    I recommend to use erythritol because it is my absolute favorite keto-friendly sweetener.
    It doesn’t spike your blood sugar, it’s very safe and has a very natural sweetness to it.

    You can use other keto-friendly sweeteners that won’t spike your blood sugar as well!

    HOW TO MAKE ALMOND CHOCOLATE CLUSTERS:

     
    1. Melt the sugar-free chocolate:
    Melt the chocolate using a double boiler.

     
    2. Add the slivered almonds to the chocolate:
    Add the almonds to the chocolate and mix thouroghly.
    Optional: add a little bit of additional sweetener.
    Take a spoonful of the almond-chocolate mix and place it on a sheet of parchment paper.

     
    3. Let cool down completely & Serve:
    Let the almond chocolate clusters cool down completely before consuming them.
    Depending on what chocolate you are using (and what room temperature you have), you can store them covered in plastic wrap either in the fridge or at room temperature.
    Most chocolate brands will be fine at room temperature! But if you want to prolong the preservability, keep them in the fridge.

    Nutrition Info:
    One almond chocolate cluster has 1.2g net carbs (2.4g total carbs and 1.2g dietary fiber), 8.7g fat, 2.8g protein, and 98 calories.

    Keep in mind that the nutrition info per serving may change depending on the size of the clusters you make. One almond chocolate cluster of mine weighted approx. 0.5oz (15g).
    I used a local brand (Germany) of chocolate with a cacoa content of 91%.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
