Our household has a strict distribution of roles.
I’m the strawberry girl and my boyfriend Alex is the blueberry guy.

While I can’t keep my hands of everything that is even remotely related to strawberries, Alex feels the same way about blueberries.
So whenever Alex and I feel like having a sweet treat, there’s no fighting about who gets to eat which dessert:
I love to snack on my keto strawberry mousse and Alex enjoys his keto blueberry mousse.
 
Sugar-Free Keto Blueberry Mousse
 
I usually make several jars of my keto mousse recipes so that we always have something at home that’ll satisfy our sweet tooths.
They are good to eat for several days and I’ve found having a sweet keto dessert already prepared and ready to eat makes sticking to the ketogenic diet A LOT easier, especially when you first start out.

Sweet cravings will happen once in a while, even though the keto diet reduces them tremendously, and that’s the time to have this delicious keto blueberry mousse with only 4.7g net carbs or my keto strawberry mousse with 4.0 net carbs instead of something that’s loaded with sugar.

So if you feel like you’re experiencing sweet cravings right now, go ahead and make this recipe right now, you only need 4 ingredients with an optional 5th one!

    KETO BLUEBERRY MOUSSE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!

  • blueberries:
    I prefer to use frozen blueberries.

    Frozen produce is usually richer in micronutrients than fresh produce because it gets harvested at the peak of their ripeness whereas fresh produce gets picked earlier to avoid spoiling of the food in transit.
    Plus: It’s available all year round!

    Another important step is to cook the blueberries until most of the liquid has evaporated.
    This will intensify the aroma of the blueberries and results in a much richer flavor.
    It will also make sure that the consistency isn’t too “runny”.

  • full-fat cream cheese
  • heavy cream:
    You could also skip the heavy cream and only use cream cheese if you prefer that or don’t have it at hand, but it’ll make the final blueberry mousse fluffier and more decadent.

  • powdered erythritol
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other powdered keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Simply taste a tiny amount of the blueberry fat bomb mass before oversweetening it and adjust accordingly.

  • lemon juice from a fresh lemon (optional):
    I personally really enjoy adding a bit of lemon juice to my blueberry mousse as well.
    I’ve found that it fit’s perfectly to any sweet recipes containing blueberries as it enhances the subtle sourness of the blueberries but that’s totally up to you!
  • fresh blueberries (optional):
    For decoration.

    Sugar-Free Keto Blueberry Mousse

    What You'll Need For Your Keto Blueberry Mousse:
     3 oz full-fat cream cheese (approx. 90g)
     2 tbsp heavy cream (30ml)
     2 tbsp powdered erythritol (approx. 12g)
     2.60 oz (frozen) blueberries (approx. 75g)
    Optional:
     1 tsp lemon juice

    How To Make It:
    1

    Add the blueberries into a small non-sticking pot and cook the blueberries for approx. 10 minutes until most of the liquid has evaporated.
    You should be left with a dark purple blueberry "paste" (it should look like jam).
    Make sure to stir every minute or so.
     

    ☝︎ I always prefer to cook blueberries, strawberries, and raspberries for these kinds of recipes.
    The cooking process intensifies the aroma and improves the texture of the final recipe.

    In this recipe, cooking the blueberries will result in a rich blueberry taste and a creamy texture.
    You can also skip the cooking, but be prepared that it'll taste a bit more watery and not as vibrant.

    Add all of the ingredients into a bowl and mix either with a hand blender (my favorite method - incorporates more air into the mousse and makes it creamier and fluffier) or mix by hand with a spoon.

    Fill the mixture into a jar of your choice.

    Chill for at least 30 minutes for optimal taste.

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
