This blog is probably a pretty good reflection of things that had me struggle the most when I first started the ketogenic diet.

One of those things that had me in trouble were sugar-laden desserts and treats – they were always such a huge temptation when I first started on keto.

A way to solve that issue was by creating a sh** ton of keto-friendly dessert recipes that would satisfy those cravings without kicking me out of ketosis.
That’s why 80% of hungry for inspiration are sweet recipes.

The other 20% are recipes like this sugar-free keto coleslaw recipe.
We used to eat a lot of homemade coleslaw but my mum usually added heaps of sugar to make it taste good.

This creamy coleslaw recipe is completely sugar-free and it’s also suitable for the ketogenic diet with only 3.9g net carbs per serving!
It’s been a staple during the last few summer months and it’s one of the best keto side dishes!

SUGAR-FREE KETO COLESLAW INGREDIENTS:

This section is where I share a few suggestions and explanations regarding the ingredients needed for this recipe.

  • white cabbage
  • carrot
  • onion
  • granulated erythritol:

    Why do I love Erythritol so much?
    In my opinion, Erythritol is the best keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.

    You can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Keep that ratio in mind when using a 1:1 sugar replacement.

  • mayonnaise
    The ideal version of this keto coleslaw recipe uses homemade mayonnaise with a healthy oil base like olive oil or avocado oil, but were all human and I sometimes just use the store-bought mayonnaise with non-ideal vegetable oils.
  • heavy cream
  • apple cider vinegar
    You can also use white wine vinegar, but apple cider vinegar has some additional health benefits.
  • lemon juice (of a fresh lemon)
  • paprika powder
  • salt, pepper
  • mustard
    This isn’t required, but I’ve found it’s a really great addition to this recipe.

    HOW TO MAKE SUGAR-FREE KETO COLESLAW:

    Sugar Free Keto Coleslaw Recipe

    Ingredients:
     ½ of a large white cabbage head, chopped into small strips (approx. 17.6oz/500g)
     1 carrot, grated or chopped into small strips (approx. 3oz/90g)
     1 shallot (or small onion), chopped very finely (approx. 1.75oz/50g)
    Ingredients for the sugar-free coleslaw dressing:
     ½ cup mayonnaise (approx. 4.2oz/120g)
     7 tbsp heavy cream (approx. 3.4 fl.oz/100ml)
     4 tbsp granulated erythritol (1.5oz/42g)
     1.50 tbsp apple cider vinegar
     2 tbsp lemon juice (1 lemon)
     ¼ tsp paprika powder
     1 tsp mustard
     salt, pepper to taste

    Instructions:
    1

    Wash the cabbage head.
    Peel the shallot and carrot.
     

    2

    Split the cabbage head into two.
    Start to chop the cabbage into small strips.
     

    3

    Chop the shallot into fine cubes and the carrot into fine strips as well.
    Add all of the chopped cabbage, shallot, and carrot into a large bowl.
     

    Prepare the coleslaw dressing:

    In a separate bowl, mix all of the ingredients for the coleslaw dressing.
     

    5

    Pour the coleslaw dressing into the bowl with the chopped cabbage and mix thoroughly.
     

    6

    Cover the bowl with plastic wrap and store it in your fridge for at least 8 hours before enjoying your keto-friendly coleslaw salad.

    Once the 8 hours or more are over, get your keto coleslaw out of your fridge and stir thoroughly before serving.

    Cover the coleslaw bowl with plastic wrap or store the remaining coleslaw in an air-tight container in your fridge for up to 3 days.
