The end of summer is near and even though I’ll miss the warm temperatures I’m also excited for the next season.
We all know what this means.

Pumpkin everything.
I’ve already created a few ketogenic pumpkin treats last year, for example, this keto pumpkin pie mug cake or these keto pumpkin pie fat bombs and I’m not planning to stop making more of them anytime soon.

Pumpkin has something incredibly comforting about it and it’s definetly easier to cope with the end of summer by indulding in delicious treats like these.

This keto “pumpkin pie” mousse is the perfect treat for the coming months and it’ll keep you in ketosis through the holiday season with only 2.7g net carbs per serving!

    KETO PUMPKIN PIE MOUSSE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!

  • mascarpone cheese
    You can also use cream cheese for this recipe.
    I prefer using mascarpone cheese as it doesn’t have a strong taste of its’ own and I think it fits better for this recipe, but cream cheese will work just as well. 🙂
  • heavy cream
  • pumpkin puree: I always recommend to make your own one and avoid canned pumpkin puree. It’s fresher, more nutritious, more flavorful and super easy to make.
    Simply chop up some pumpkin and cook the pieces with a bit of water (approx. 5 tbsp for 1/4 of a hokkaido pumpkin or butternut squash until fork tender. Puree with a hand blender and you’re done.
  • brown erythritol:

    I got my brown erythritol from a local brand in Germany and unfortunately, it’s not available in the US.

    I haven’t tried both of the following products myself but the reviews are very good so I feel confident in suggesting them to you:

    1. Golden Monk Fruit Sweetener
    (I really want to try monk fruit sweetener myself as I’ve read so much praise about it but it doesn’t ship to Germany! Hopefully, I can get my hands on it when I’m in the US this year.)

    2. Sukrin Gold Brown sugar substitute
    (This is pretty close to the product I used but it differs in the fact that this is a 1:1 replacement for sugar whereas the erythritol I used is only 70% as sweet as sugar.
    I adjusted the amounts you would have to use if you use a 1:1 replacement on the recipe card!)

    Why do I love Erythritol so much?
    In my opinion, Erythritol is the best keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.

    You can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    I adjusted the amounts in the recipe card for 1:1 sugar replacements as well, don’t worry!

  • sugar-free vanilla extract
  • pumpkin spice

    If you don’t have pumpkin spice, you can easily make your own one.

    Mix the following spices:

    ☞ 1 tsp cinnamon
    ☞ ½ tsp ginger (ground)
    ☞ ½ tsp allspice (ground)
    ☞ ¼ tsp cloves (ground)
    ☞ ¼ tsp nutmeg (ground)

    Easy Keto Pumpkin Pie Mousse

    Ingredients:
     6 tbsp mascarpone cheese (alternative: cream cheese) (80g)
     3 tbsp heavy cream (45ml)
     2 tbsp pumpkin puree (28g)
     1.50 tbsp (0.7oz/20g) pure brown erythritol or 1 tbsp (0.5oz/14g) Golden Monk Fruit Sweetener or 1:1 brown erythritol blend
      tsp pumpkin spice

    Instructions:
    1

    Add all of the ingredients into a large bowl and mix with a hand mixer or egg beater until you get a smooth mass.
     

    2

    Use an icing bag or simply a spoon to transfer the mass into a suitable jar or glass.
     

    3

    Chill for at least 30 minutes before enjoying your keto "pumpkin pie" mousse.
     

    Storage:

    Close the jar with a lid or plastic wrap and store in your fridge for 2-3 days.

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
