(You can find the exact amounts needed on the recipe card embedded below this section).

  • water
  • (frozen) strawberries
I prefer to use frozen strawberries.

Frozen produce is usually richer in micronutrients than fresh produce because it gets harvested at the peak of their ripeness whereas fresh produce gets picked earlier to avoid spoiling the food in transit.
Plus: It’s available all year round!

  • half & half
  • chia seeds
  • erythritol
    Why erythritol?
In my opinion, erythritol is the best keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.

You can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Keep that ratio in mind when using a 1:1 sugar replacement.

HOW TO MAKE THE KETO STRAWBERRY CHIA PUDDING:

    Yields1 Serving
    Prep Time5 minsCook Time10 minsTotal Time15 mins

    Ingredients:
     ¼ cup water (2 fl oz/60ml)
     ½ cup (frozen) strawberries (1.8 oz/50g)
     2 ½ tbsp half & half (1.4 fl oz/40ml)
     2 ½ tbsp chia seeds (1.1 oz/30g)
     2 tbsp erythritol (0.9 oz/25g)

    1

Add the strawberries into a small (non-stick) pot and set the heat to medium.

Let the strawberries simmer for about 10 minutes and stir them regularly while they cook.

You know the strawberries are good once their consistency starts to resemble that of thick strawberry jam.

    2

Mash the cooked strawberries with a fork until you get a smooth mass with as few large strawberry chunks as possible.

    3

Add the mashed strawberries as well as the remaining ingredients to a small jar and mix right away.
Let the jar sit for about two minutes before stirring again.

    4

Wait another five minutes before stirring again.

Make sure there are no clumps of chia seeds at the bottom or the edge of the jar and that everything is evenly distributed.

    5

Place the jar in your refrigerator for at least 30 minutes.

    6

After the 30 minutes are over, you can take your keto chia pudding out of your fridge.
Give it a good stir one last time and enjoy!

You can also leave it in the fridge for a longer period of time and eat it later, especially if your cooked strawberries were still quite hot when you mixed your chia pudding - but you should still stir the pudding once more at the 30 minute mark.

    Storage:
    7

Cover the keto strawberry chia pudding with plastic foil or a matching lid for your jar and store it in your fridge.

The pudding will keep fresh in the refrigerator for 3-4 days.

Q: How do you include Erythritol in your calculations?

A: The short answer is: I don’t, and I can tell you why.

Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
