Maybe it’s because I’m German or maybe it’s just the way I am:
I like efficiency.
If there’s a way to do something faster or be more productive, I usually try to find it.

And this obviously also shines through when I create recipes.
I always ask myself this question – how can I get the most nutrition out of this recipe?
Of course, this isn’t on the top of my list otherwise I would just add spinach or other highly nutritious foods to everything I make and that would become disgusting after a while but I certainly try to get the most out of everything I eat.
Especially when I make “treats” that aren’t inherently nutritious like keto mug cakes or fat bombs.

Even though, I have to add that my keto mug cakes are still relatively unproblematic.
I enjoy my keto mug cakes a lot because I know I can eat them with a clean conscience.
They are gluten-free, low carb and super high in fiber as well as protein (due to the almond and coconut flour).
So they are already absolutely healthy for you.
But when I can I like to spice things up and add even more nutrition to it – this matcha pistachio keto mug cake was one of the results for this quest!

Pistachios are relatively high in carbs but I have a very relaxed approach to the ketogenic diet – if it doesn’t blow your carb count you can eat everything you want, you just have to account for it.
(And one serving of this matcha pistachio mug cake is still very low carb with only 5.5 net carbs per serving (half a mug cake.)
I admit it’s higher than most of my other keto mug cakes but if you want to reduce the carb count, skip the pistachios or reduce the amount of them.

The Matcha powder is where my desire for efficiency comes into play – it’s one of those “superfoods” you keep hearing about but what’s the big deal?
 

Health benefits of matcha green tea powder:

  • Matcha green tea powder contains so-called catechins, which are linked to a variety of positive health effects.
    Some studies show a promising effect of increased fat oxidation aka fat burning, meaning increased weight loss for you.
  • The amount of caffeine in Matcha green tea powder (and green tea in general) will stimulate you without the unpleasant feeling of anxiety that coffee can sometimes induce.
  • The catechins in Matcha green tea powder and green tea are very potent antioxidants.
    Antioxidants do exactly what the name suggests: they fight so-called free radicals that are responsible for oxidative stress in your body (oxidative stress = not good).
    Free radicals are a natural part of life but stressors such as smoking, unhealthy eating habits, and air pollutants increase the amount of free radicals in your body.
    You can actively fight this by including food groups in your diet that are high in antioxidants – such as Matcha green tea powder or green tea in general!
  • Long story short: Green tea and Matcha green tea powder get a big GO from me!

     
    Matcha Pistachio Keto Mug Cake (Keto Dessert, Keto Snacks, Low Carb Desserts)
     

    MATCHA PISTACHIO KETO MUG CAKE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!)
     

  • finely ground coconut flour
  • finely ground almond flour
  • erythritol: my absolute favorite keto-friendly sweetener! But you can use other granulated, keto-friendly sweeteners as well.
    ☝︎ Because of its’ natural origin, I do consider erythritol to be paleo-friendly.

    UPDATE: A recent comment I got stated that you probably have to change the amount of sweetener used if you use something different than erythritol.
    To be on the safe side – taste a super small amount of the dough before you bake it to see if it’s sweet enough. 🙂

  • coconut oil: ideally organic and melted.
  • eggs: one whole egg.
    I recommend buying pasteured eggs – those contain more beneficial Omega-3 Fatty Acids!
  • almond milk: unsweetened
  • baking powder: look for a gluten-free version without corn starch for paleo-friendly option or make your own one!
  • pistachios: unsalted!
  • Matcha Green Tea Powder: You can either choose to buy culinary grade Matcha powder which is mostly used for cooking and baking and premium grade (ceremonial grade) Matcha powder which is used to brew the tea.
    The culinary grade is cheaper than the premium grade but to be honest, I still recommend buying premium grade Matcha powder if you don’t use it for baking very often.
    The premium grade Matcha powder tastes milder and less bitter than the culinary grade (which I personally prefer.)
    And it tastes amazing with almond milk and a bit of vanilla extract as a healthy Matcha Latté in the morning!
  •  
    Optional: You can add keto-friendly cream cheese frosting to the mug cake if you want to.
    ☞ Basic recipe for my keto-friendly cream cheese frosting
     
    ☝︎ A small warning for the Matcha cream cheese frosting:
    It tastes A LOT like Matcha.
    My boyfriend isn’t a big fan of Matcha powder and he didn’t like the frosting at all.
    If you don’t enjoy the taste of Matcha powder – don’t add Matcha to the cream cheese frosting!

    Oh and BTW, my boyfriend didn’t mind the Matcha in the keto mug cake itself because it had a mild taste and wasn’t as dominant as in the cream cheese frosting.

     


     
    Matcha Pistachio Keto Mug Cake (Keto Dessert, Keto Snacks, Low Carb Desserts)
     

    HOW TO MAKE THIS MATCHA PISTACHIO KETO MUG CAKE:

     
    1. Mix the ingredients:
    Chop the pistachios and mix all of the ingredients in a small bowl and whisk until you get a smooth and chunk-free dough.
    Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I almost always use coconut oil).
    Add your cake batter into a mug (the mug should be at least double the size of the mixed ingredients).
     
    2. Bake…
    …in the microwave:
    Microwave for about 60-90 seconds.
    (The cooking time in your microwave may vary heavily because of different microwaves and settings used – I recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed. (To avoid dryness.)
    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    … in the oven:
    Preheat your oven to 350 degrees Fahrenheit (180°C).
    Follow the same steps as above.
    Bake your mug cake for about 10-15 minutes.
    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    3. Serve:

    Add the cream cheese frosting (optional) once the keto mug cake has cooled off a bit and serve warm or cold!
    Enjoy!

    One serving of this keto mug cake without the cream cheese frosting (half of the mug cake) has 5.5g net carbs (9.2g total carbs and 3.7g dietary fiber), 15g fat, 10.5g protein and 204 calories.

    One serving of this keto mug cake with the cream cheese frosting (half of the mug cake) has 6.7g net carbs (10.7g total carbs and 4.0g dietary fiber), 18.4g fat, 11.8g protein and 245 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

     1 tbsp (15ml) melted coconut oil
     1 tbsp (15ml) unsweetened almond milk
     ½ tsp (3g) (gluten-free) baking powder
     1 egg
     1 tbsp (13g) chopped pistachios
    Optional: Ingredients for Matcha Frosting
     1 tbsp (15g) full fat cream cheese
     1 tbsp (15ml) unsweetened almond milk
     1 tsp (7g) erythritol
     ¼ tsp (1.5g) matcha green tea powder
     chopped pistachios for decoration

    Instructions: Microwave
