Well, how can I describe this ketogenic mug cake in the most accurate way possible?
It’s a chocolate lovers dream come true!

Chocolate cake batter with a moist “Keto Nutella” core topped off with melted chocolate.
Oh boy, that’s a treat!

It is a bit more calorie-dense than most of the other ketogenic mug cakes I’ve made but it’s still absolutely perfect for the ketogenic diet.
One serving (half of the mug cake) only has 3.4g net carbs!
And it’s suitable for the paleo diet as well.

I fell in love with it the moment I tasted it and my high-carb boyfriend loved it as well!

    CHOCOLATE NUTELLA KETO MUG CAKE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!)
     

  • finely ground coconut flour
  • finely ground almond flour
  • ground hazelnuts: you can also buy whole hazelnuts and ground them yourself, but buying ground hazelnuts is a lot faster & easier.
  • erythritol: my absolute favorite keto-friendly sweetener! But you can use other granulated, keto-friendly sweeteners as well. (Make sure to adjust the amount according to its’ sweetness if you use something else!)

    ☝︎ Because of its’ natural origin, I do consider erythritol to be paleo-friendly.

  • butter or coconut oil: I used coconut oil for this recipe. Make sure to buy native & organic coconut oil.
  • eggs: one whole egg
  • almond milk: unsweetened
  • baking powder: look for a gluten-free version without corn starch for paleo-friendly option or make your own one!
  • baking cacoa powder (dutch processed cacoa powder): dutch processed cacoa powder has a very strong chocolate taste and because of that it’s ideal for low carb baking.
    You only need a very tiny amount to make chocolate keto treats.
  • sugar-free vanilla extract if you can’t find sugar-free vanilla extract and you’re living paleo you can use 1/2 vanilla pod instead.
  • homemade keto nutella Reduce the recipe to 1/4 or even less if you don’t want to have left overs.
    If you don’t want to spend the time or ingredients making the Keto Nutella yourself, you can also use storebought one! (Or you can make my Chocolate Keto Mug Cake With Peanut Butter Core instead!)
  • optional: sugar-free chocolate for the topping

    HOW TO MAKE A CHOCOLATE NUTELLA KETO MUG CAKE:

     
    1. Mix the ingredients:
    Make a batch of Keto Nutella.
    Mix all of the ingredients except for the Keto Nutella and the melted chocolate (optional) in a small bowl until you get a smooth and chunk-free dough.

    Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I usually use coconut oil or butter).
    Transfer half of the cake batter into your oven-safe mug or bowl (the mug should be at least double the size of the mixed ingredients).
    Add 2 tbsp of the keto Nutella to the middle of the mug cake batter and add the remaining mug cake batter on top of it.

     
    2. Bake…
    …in the microwave:
    Microwave for about 1-3 minutes.
    (The cooking time in your microwave may vary heavily depending on what microwave and what settings you’re using.
    A broad rule of thumb: Approx. 1 Minute at 1200 Watt and more like 2-3 minutes at <600 Watt.

    If you don’t know the Wattage power of your microwave I’d recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed.
    This will avoid that the mug cake dries out.
    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
    ☝︎ Because this recipe has a semi-soft Keto Nutella core, I’d recommend baking your mug cake in the oven. (This will preserve the moistness of the core better than the microwave.)
     
    … in the oven:
    Preheat your oven to 350 degrees Fahrenheit (180°C).
    Follow the same steps as above.
    Bake your mug cake for about 10-15 minutes.
    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    3. Serve:
    Add a bit of melted sugar-free chocolate & chopped hazelnuts (optional) and serve warm or cold!

    One serving of this keto mug cake (half of the mug cake) has 3.4g net carbs (8.8g total carbs and 5.4g dietary fiber), 24g fat, 8.6g protein and 276 calories.
