This recipe is probably one of my favorite keto treats.
Mainly because it’s so easy and quick to make.

You can whip it up within 5 minutes and because I almost always have cream cheese at home it’s one of my go-to keto dessert choices.

I didn’t even think of publishing this recipe until now because it’s really that easy – with only 4 ingredients + 2 optional ones it’s one of those treats you can make at any time because most long-time low carb enthusiasts have most of the ingredients already at home.

You might ask yourself if passionfruits are keto-friendly and if you’ve read some of my other recipes before you will already know that I like to do the math before excluding any food items from my diet.

Passionfruits have 10g net carbs/100g and the edible part of an averagely sized passionfruit weighs 30-50g.
Because this recipe yields 2 servings the passionfruit only adds about 2.5g net carbs per serving.
Doesn’t sound that bad or scary at all, right?

I’ve never kicked myself out of ketosis while I was monitoring my carbs and doing the math, even while eating food products that are deemed “unsuitable for the keto-diet” by most proponents.

I only get kicked out of ketosis when I don’t count my carb intake or consciously eat high-carb foods.

If you want to make this a lifestyle rather than an 8-week thing I think the best way to go is to not exclude anything per se (well, perhaps besides pasta and rice) and still enjoy an occasional treat like this passionfruit keto cheesecake that only adds about 4g net carbs to your carb count!

    PASSIONFRUIT KETO CHEESECAKE INGREDIENTS:

    You can find the exact amounts needed in the recipe card at the end of this post!

  • full-fat cream cheese
  • (optional) heavy cream:
    beaten until stiff.
    The heavy cream is optional and not mandatory for this recipe – adding the heavy cream will make the cheesecake cream fluffier and “lighter” in taste.

    I tried both variants and enjoy both very much – if you don’t have a lot of time you can easily skip the heavy cream without risking that your recipe will fail.

  • passionfruit:
    of course, you can also use other kinds of fruit.
  • granulated erythritol:
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Simply taste a tiny amount of keto cheesecake cream before oversweetening it and adjust accordingly.

  • sugar-free vanilla extract
  • locust bean gum powder or guar gum powder (optional):
    I like to add a small amount of keto-friendly thickening agent to the otherwise “runny” passionfruit because I prefer the thicker consistency.
    This is absolutely optional and not necessary for the recipe though.

    HOW TO MAKE PASSIONFRUIT KETO CHEESECAKE:

     
    1. Mix the ingredients for the cheesecake cream:
    Mix the cream cheese, vanilla extract and erythritol in a bowl.

    In a separate bowl, beat the heavy cream until stiff and fold it into the cream cheese mixture.

     
    2. Prepare the jar:
    Optional: Add 1/4 tsp of locust bean gum powder or guar gum powder (keto-friendly thickening agents) to the passionfruit seeds for a thicker consistency.
    I personally prefer the thicker consistency but you don’t have to do this.

    Add the cheesecake cream into a jar or glass of your choice. Add the passionfruit on top of it.

     
    3. Chill & Serve:

    Chill in the fridge for 30 minutes before enjoying!

    Consume within 1-2 days.

    Nutrition Info:
    One serving with the heavy cream (1/2 of the recipe) has 3.9g net carbs (6.4g total carbs and 2.5g dietary fiber), 20g fat, 3.6g protein, and 213 calories.

    One serving without the heavy cream (1/2 of the recipe) has 3.5g net carbs (6.0g total carbs and 2.5g dietary fiber), 14.5g fat, 3.3g protein, and 160 calories.

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.

    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this you can subtract the carbs from erythritol completely, which is what I always do. 

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
