I feel like half of my site consists of ketogenic mug cakes.
Well, maybe it actually does.

But I just love to come up with new combinations to keep my keto mug cakes interesting.
Wouldn’t it be incredibly boring to make the same mug cake every time?

Playing around with different ingredients will lead to amazing new recipes that can become a staple in my and eventually your diet – so I’m defintely not stopping, haha!

This peanut butter keto mug cake is actually the easiest I’ve ever made.
And one of the most delicious ones too.

I’d say I’m not as crazy about peanut butter as other fellow low carb enthusiasths seem to be but I definetly like to have it once in a while.

It’s important to keep the carb count of peanuts in mind though when engaging in peanut butter orgies – while nuts are generally suitable for the ketogenic diet, peanuts are a bit higher in carbs than other nuts like macadamias, walnuts or pecans.
So, have peanuts but count your carbs!

For this recipe I already counted them and one serving of this peanut butter keto mug cake will add approx. 4.5g net carbs to your carb count!

Granted, it’s a bit higher in carbs than other ketogenic mug cakes I’ve made but 4.5g net carbs are still incredibly low!

Especially considering the fact that one serving of this mug cake will fill you up and can replace a small breakfast or snack throughout the day!

So if you’re a peanut butter lover and you’re tired of eating it right off the spoon – this recipe is the right one for you!

    PEANUT BUTTER KETO MUG CAKE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!)
     

  • finely ground coconut flour
  • finely ground almond flour: the mixture of almond flour and coconut flour is the secret to keep this recipe affordable and as delicious as it is!
  • granulated erythritol:
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Simply taste a tiny amount of the mass before oversweetening it and adjust accordingly.

  • smooth sugar-free peanut butter: the only ingredients added should be peanuts, water and/ or salt.
    If there’s anything else, it could be sugar and we don’t want that!

    You will find a bit of sugar on the nutrition label even on peanut butter with no sugar added – but that’s the natural sugar from the peanuts.
    No way around that.

    But as soon as something else pops up, especially something you can’t pronounce, skip it.

    (Fun fact: Did you know sugar has over 50 names?
    A neat trick manufracturers like to use is to replace the name “sugar” with one or more of the 50 other synonyms to mislead customers.

  • eggs: one whole egg
  • almond milk: unsweetened
  • baking powder: look for a gluten-free version without corn starch for paleo-friendly option or make your own one!
  • sugar-free vanilla extract: if you can’t find sugar-free vanilla extract or you’re living paleo you can use 1/2 vanilla pod instead.
  • Optional:

  • I topped the mug cake with a bit of melted sugar-free chocolate and chopped peanuts, but to be honest – I did it mostly for the pictures!

    HOW TO MAKE A PEANUT BUTTER KETO MUG CAKE:

     
    1. Mix the ingredients:
    Mix all of the ingredients (except for the melted sugar-free chocolate and chopped peanuts) in a small oven-safe bowl or mug until you get a smooth and chunk-free dough.

    Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I usually used coconut oil in the past but recently I switched to avocado oil because it has a higher smoke point and is such better for high temperature cooking).

     
    2. Bake…
    …in the microwave:
    Microwave for about 1-3 minutes.
    (The cooking time in your microwave may vary heavily depending on what microwave and what settings you’re using.

    A broad rule of thumb: Approx. 1 Minute at 1200 Watt and more like 2-3 minutes at <600 Watt.

    If you don’t know the Wattage power of your microwave I’d recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed.
    This will avoid that the mug cake dries out.

    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    … in the oven:
    Preheat your oven to 350 degrees Fahrenheit (180°C).
    Follow the same steps as above.
    Bake your mug cake for about 10-15 minutes.

    3. Serve:
    Add a bit of melted sugar-free chocolate & chopped peanuts (optional) and serve warm or cold!

    Nutrition Info:

    One serving of this keto mug cake (half of the mug cake) has 4.5g net carbs (9.1g total carbs and 4.6g dietary fiber), 11.7g fat, 12.4g protein and 185 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Q: How do you include Erythritol in your calculations?

    A: The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.

    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

     1 egg
     ½ tsp (gluten-free) baking powder
    (Optional) Topping:
