A short while ago I posted a recipe for a keto-friendly pumpkin pie mug cake and it was quite a hit.
For a reason, it tastes absolutely delicious and surprisingly A LOT like actual pumpkin pie!

Because the season right now is so perfect for pumpkin recipes I thought about other ways to use pumpkin in my keto recipes and … drumroll… these pumpkin pie keto fat bombs were the result!

They’re so easy to make it’s almost ridiculous and they will satisfy your sweet tooth in no time!
I love to have them as a small & sweet snack in the evening with a hot cup of tea – it feels so cozy and perfect for fall.

Like all my recipes, these pumpkin pie keto fat bombs are super low carb with only 0.6g net carbs per ball.
At the same time, you’re getting a good amount of dietary fiber (0.8g per ball) and healthy fats (5.6g per ball).

    PUMPKIN PIE KETO FAT BOMBS INGREDIENTS:

    (You can find the exact amounts needed in the recipe card at the end of this post!)

  • ground almonds: you can use ground almonds or almond flour for this recipe. Ground almonds are usually cheaper & easier to find, but you can use whatever you already have at home!
  • butter or other fat substitute: I recommend to use melted butter for this recipe because it’s usually used in traditional pumpkin pie recipes and goes really well with it.

    *PALEO & VEGAN ADAPTATIONS: if you’re eating paleo or vegan you’ll want to avoid the butter and use a suitable fat substitute instead.
    A good option is melted coconut oil – but be aware that the taste of the final fat bombs will differ from what I’ve made.

  • pumpkin puree: I always recommend to make your own one and avoid canned pumpkin puree. It’s fresher, more nutritious, more flavorful and super easy to make.
    Simply chop up some pumpkin and cook the pieces with a bit of water (approx. 5 tbsp for 1/4 of a hokkaido pumpkin or butternut squash) until fork tender. Puree with a hand blender and you’re done.
  • granulated erythritol:
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Keep that ratio in mind and adjust accordingly.

  • coconut flour: the coconut flour will pull out some of the excess moisture

    HOW TO MAKE PUMPKIN PIE KETO FAT BOMBS:

     
    1. Mix the ingredients:
    Mix all of the ingredients in a small bowl until you get a smooth and chunk-free mass.

     
    2. Store in freezer & form balls:
    Place the bowl in your freezer and chill for approx. 10-15 minutes.
    Take out the pumpkin pie fat bomb mass and start to form small balls with your hands.

    Spread a bit of granulated erythritol (or other granulated sweetener) on a plate and roll your balls in the sweetener.

     
    3. Chill in the fridge:
    Place the finished fat bombs in your fridge for at least 30 minutes before eating.

     
    4. Serve:
    Enjoy with a hot cup of tea & covered in a blanket for that cozy fall feeling! ♥︎

    Cover the pumpkin pie fat bombs with plastic wrap and store them in your fridge for up to 4-5 days.
     
     
    Nutrition Info:
    One ball has 0.6g net carbs (1.6g total carbs and 0.8g dietary fiber), 5.6g fat, 1.0g protein, and 60 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Q: How do you include Erythritol in your calculations?

    A: The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.

    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
