This Healthy Matcha Pistachio Keto Mug Cake has the best of both worlds! It's super healthy and high in fiber while satisfying your sweet tooth!

 2 tbsp (16g) finely ground coconut flour
 2 tbsp (16g) finely ground almond flour
 2 tbsp (28g) erythritol
 1 tbsp (15ml) melted coconut oil
 1 tbsp (15ml) unsweetened almond milk
 ½ tsp (3g) (gluten-free) baking powder
 1 egg
 ½ tsp (3g) matcha green tea powder
 1 tbsp (13g) chopped pistachios
Optional: Ingredients for Matcha Frosting
 1 tbsp (15g) full fat cream cheese
 1 tbsp (15ml) unsweetened almond milk
 1 tsp (7g) erythritol
 ¼ tsp (1.5g) matcha green tea powder
 chopped pistachios for decoration
Instructions: Microwave

Chop the pistachios.
Add all of the ingredients for the mug cake batter into a small bowl and whisk until you get a smooth and chunk-free dough.

Grease your microwave-safe mug with a cooking oil that doesn't have a strong taste (I almost always use coconut oil or melted butter).

Add your cake batter into a mug (the mug should be at least double the size of the mixed ingredients).

Microwave for about 60-90 seconds.
(The cooking time in your microwave may vary heavily because of a different microwave or settings used - I recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed. (To avoid dryness.)
You can test if your mug cake is completely cooked by pricking the center with a toothpick - if it comes out "clean" it's ready!

Optional: Mix the ingredients for the cream cheese frosting.
Add a few chopped pistachios on top for decoration.
Wait until your mug cake has cooled off a bit and add the frosting on top of your mug cake.

Instructions: Oven

Preheat your oven to 350 degrees Fahrenheit (180°C).

Follow the same steps as above.
Bake your mug cake for about 10-15 minutes.
You can test if your mug cake is completely cooked by pricking the center with a toothpick - if it comes out "clean" it's ready!

Add a few chopped pistachios on top for decoration.
Wait until your mug cake has cooled off a bit and add the frosting on top of your mug cake.
