There is one thing I always really miss on my ketogenic diet.
Strawberries.
I kicked myself out of ketosis several times because I went crazy on strawberries and ate too much of them.

Giving them up completely is not an option for me, so I had to think about something that would allow me to have a few strawberries without going crazy on them.
Something that works super well for me is my sugar-free strawberry chia jam.

Whenever I have enough carbs left on a specific day, I love to treat myself with a small bowl of yogurt with a spoon of strawberry chia jam.
It is a snack that is a bit high in carbs, so I only have it when I know that it doesn’t blow my carb count.

Recently I discovered another incredibly delicious strawberry snack I can have while on the keto diet:
this strawberry chia keto mug cake!

Even though it contains real strawberries, one serving (half a mug cake) only has 4.1g net carbs.
At the same time you’re getting 1/6 of the recommended daily intake for fiber!

How To Make A Strawberry Chia Keto Mug Cake

 

The Strawberries

 
I prefer using real strawberries instead of sugar-free syrups or aroma.
That’s why I recommend choosing one of these two options:

Option A: Make a batch of this healthy, sugar-free strawberry chia jam.

OR:

Option B: If you don’t want to spend extra time making (aka cooking) the strawberry jam first, you can alternatively puree a handful (approx. 3/4 cup) of fresh strawberries, add a tbsp of chia seeds as well as 2 tsp erythritol.
(Wait 30 minutes before adding the fresh strawberry puree to your mug cake mixture.)

☝︎ Don’t add the strawberry puree and the chia seeds separately to your mug cake mixture.
The chia seeds need liquid to absorb, otherwise, they can upset your stomach.
If you add the seeds to your mug cake mixture without “soaking” them in the strawberry puree or jam first, they won’t absorb enough liquid before you eat them.

Other ingredients:

If you’re living a low carb lifestyle, you probably have most if not all other ingredients already at home.

All you need for this keto mug cake: (You can find the exact amounts needed in the recipe card at the end of the post.)

☞ finely ground coconut flour,
☞ finely ground almond flour,
erythritol (my favorite keto-friendly sweetener, but other granulated keto-friendly sweeteners that don’t spike your blood sugar are fine as well!),
baking powder (choose a gluten-free one without corn starch or make your own for paleo option),
melted coconut oil (you can use butter or ghee to replace the coconut oil),
unsweetened almond milk (or coconut milk),
☞ an egg,
☞ a tbsp of my sugar-free strawberry chia jam or strawberry puree with chia seeds
☞ a pinch of salt


I always like to add a spoon of cream cheese frosting to my mug cakes and I highly recommend it.
It just makes everything so much moister and more “cake-like”.
If you want to save some calories, you can obviously skip that step, but if you’re anything like me and want to satisfy your sweet tooth even more, here’s what you’ll need for the strawberry cream cheese frosting:

☞ full fat cream cheese
erythritol
unsweetened almond milk
☞ a tsp of my sugar-free strawberry chia jam or strawberry puree with chia seeds

Instructions for this keto mug cake:

You can bake your mug cake in your microwave or in your oven.
I’ll be giving you instructions for both options.

If you are choosing to bake your mug cake in an oven, preheat your oven to 350°F/180°C.
Continue by mixing all of the ingredients for the mug cake in a small bowl or mug.
Make sure that you whisk until you get a smooth and chunk-free dough before proceeding.

Grease a microwave- or oven-safe mug with a tasteless plant oil or oil spray (I usually use coconut oil or sunflower oil.)
Add the dough to your mug and place it in your microwave for about 60 seconds.
The cooking time may vary heavily depending on the microwave, and its settings, the size of your mug and mug cake.
That’s why I recommend, that you start baking it for 50-60 seconds in your microwave and test it before overcooking it.
You can always place it back into your microwave if it isn’t done yet.
Test the cake by pricking it in the center with a toothpick – if the toothpick comes out “clean”, your cake is done!

If you’re baking it in your oven, place the mug in your oven for 10-15 minutes. Like with the microwave version, test if it’s done with the toothpick test.

While your keto mug cake cools off a bit, mix the ingredients for the strawberry cream cheese frosting.
Add the cream cheese frosting on top of your ketogenic mug cake and enjoy!
 
One serving of this mug cake with the cream cheese frosting (half of the mug cake) has approx. 4.1g net carbs (9g total carbs and 5.1g dietary fiber) 14.7g of fat, 9.7g of protein and 230 calories.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Optional: Strawberry Cream Cheese Frosting
     2 tbsp (28g) full fat cream cheese
     1 tbsp (15g) erythritol
     1 tbsp (15ml) unsweetened almond milk

    Instructions: Microwave

    Mix the ingredients for the mug cake in a small bowl or mug and whisk until you get a smooth and chunk-free dough.

    Grease your microwave-safe mug with a plant oil or oil spray that doesn't have a strong taste (I almost always use coconut oil or sunflower oil).

    Add your cake batter into a mug (the mug should be at least double the size of the mixed ingredients).
