This vanilla chocolate chip keto mug cake is the first post of mine with an added instruction video!
It was the first time ever I actually made and edited a video in general, to be precise.
Because I messed up quite a few takes for the video I had to make this mug cake a whopping 5 times until I got it right!
That’s what I call dedication, haha!
I’m quite pleased with the result and I really hope you will like it too!
I LOVE to watch instruction videos for recipes.
I always give my best in trying to make the written instructions as clear as possible but sometimes there are limitations because the process is complicated or my language skills come to an end.
(English isn’t my first language.)
The good thing is, none of the mug cakes I made will go to waste because my boyfriend and I will eat them as a delicious breakfast for the whole week!
It almost feels wrong to call this vanilla chocolate chip keto mug cake a breakfast because it surely doesn’t feel like one.
It tastes like a moist and delicious chocolate chip cookie!
I made quite a few keto mug cakes for this blog and my favorite ones constantly change.
For a while, my carrot cake keto mug cake and pumpkin pie keto mug cake have been my absolute #1 and #2 but this little delish thing right here might kick both of them off the winner’s podium.
Let’s see if I still love it as much as I do right now after I had it for breakfast all week long!

VANILLA CHOCOLATE CHIP KETO MUG CAKE INGREDIENTS:

in my opinion, the BEST keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!
Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Simply taste a tiny amount of the mass before oversweetening it and adjust accordingly.
Optional:
Right now, one pod costs approx. 13$ and that would just be disproportionate for a quick mug cake.
Maybe they’re a bit cheaper where you live, if that’s the case I highly recommend to add it to the mug cake!
HOW TO MAKE A VANILLA CHOCOLATE CHIP KETO MUG CAKE:
1. Mix the ingredients:
Mix all of the ingredients in a small bowl or mug until you get a smooth and chunk-free dough.
Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I used coconut oil or butter in the past but recently I switched to avocado oil because it has a higher smoke point and is thus better for high temperature cooking).
2. Bake…
…in the microwave:
Microwave for about 1-3 minutes.
(The cooking time in your microwave may vary heavily depending on what microwave and what settings you’re using.
A broad rule of thumb: Approx. 1 Minute at 1200 Watt and more like 2-3 minutes at <600 Watt.
If you don’t know the Wattage power of your microwave I’d recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed.
This will avoid that the mug cake dries out.
You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
… in the oven:
Preheat your oven to 350 degrees Fahrenheit (180°C).
Follow the same steps as above.
Bake your mug cake for about 10-15 minutes.
You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
3. Serve:
Enjoy right out of the oven as a warm and delicious keto dessert, or cover with plastic wrap and enjoy as a handy keto snack or even breakfast!

One serving of this keto mug cake (half of the mug cake) has 5.0g net carbs (12.7g total carbs and 7.7g dietary fiber), 20.2g fat, 14.1g protein and 285 calories.
I used dark chocolate sweetened with erythritol from a local brand in Germany for these calculations. Lily’s chocolate chips has a very similar amount of carbs to the one I used, but keep in mind that the values may change if you use a different chocolate.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
Q: How do you include Erythritol in your calculations?
A: The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

Yes, you can simply replace the coconut flour with almond flour. With coconut flour, your mug cake would be a bit more fluffy.

I made this for myself and my hubby and it was incredible. The macro breakdown is a bit different on mine (assuming it is differences in brands of ingredients) but so so delish. I make a Keto friendly strawberry shortcake and this will be my new cake base, minus the chocolate chips. I also added a small;l pinch of pink salt, cause I’m like the Frank’s Red Hot Lady with that stuff. The volume that cooks up is large and the sweetness is satisfying.
