If you’ve visited my site before you probably know that I have a small obsession with keto fat bombs.
It’s like I’ve challenged myself to make a huge fat bomb collection here on my blog and that probably wouldn’t be the worst thing in the world.
I just get bored, very, very quickly.
There are only a few recipes that I continue to make over and over again.
Most of the time after I made a recipe, I’ll eat all of the fat bombs I made and move on to new recipes.
I get excited about creating new ones and I love to mix things up.
That’s also why most of my fat bomb recipes only yield 4-8 servings.
Because most of the keto fat bomb recipes I post only take between 10-15 minutes of active work, it’s pretty easy to try out new recipes.
These keto brownie bites are no exception – 5 minutes of active work and probably the ones with the fewest carbs I posted so far!
Only 0.5g net carbs per ball and 6g of healthy fats – so absolutely perfect to increase your fat intake if you’re trying to get into ketosis (or stay there).

KETO BROWNIE BITES INGREDIENTS:
(You can find the exact amounts needed on the recipe card at the end of this post!)
I recommend to buy grass-fed butter – it’s higher in certain micronutrients and healthy fats and it contains a better ratio of omega-3 vs. omega-6 fatty acids.
The butter should be soft for this recipe: leave the butter at room temperature for 20-30 minutes for the desired consistency.
Erythritol is my favorite keto-friendly sweetener:
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very natural sweet taste.
Because of the natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.
Plus: Recent studies even show it’s actually GOOD for your teeth!
Even though I’m a little biased towards erythritol, I’m not discriminating against other keto-friendly sweeteners that won’t spike your blood sugar.
Keep in mind though, that you might have to adjust the amount used because erythritol isn’t as sweet as other sweeteners out there.
Erythritol is about 70% as sweet as normal table sugar whereas other keto-friendly sweeteners like monk fruit and stevia are usually much sweeter than sugar.
Taste a tiny amount of the mass before oversweetening it and adjust accordingly!
dutch processed cacoa powder has a very strong chocolate taste and because of that it’s ideal for low carb baking.
You only need a very tiny amount to make delicious chocolatey keto treats.
HOW TO MAKE KETO BROWNIE BITES:
1. Mix ingredients:
Mix all of the ingredients using a spoon in a bowl until you get a smooth mass.
To fully combine the softened butter with the rest of the ingredients, I recommend pressing the backside of the spoon against the “wall” of the bowl while you stir.
Imagine using the spoon as if you were to apply the fat bomb mass with a spatula.

2. Form balls:
Scoop out equal parts of the mass and form small balls using your hands.
If the fat bomb mass is too soft and you have a hard time rolling the balls, place the mass in your freezer for approx. 10 minutes and it should be a lot easier after that.
3. Serve:
Chill in your fridge for approx. 30 minutes before enjoying your keto brownie bites with a hot cup of tea or coffee!
Cover with plastic wrap and store in your fridge for at least 3-4 days.

Nutrition Info:
One keto brownie bite (approx. 0.5oz/15g) has 0.5g net carbs (1.7g total carbs and 1.2g dietary fiber), 6g fat, 2.5g protein, and 68 calories.
Keep in mind that the nutrition info per serving may change depending on the size of the balls you make.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
Q: How do you include Erythritol in your calculations?
A: The short answer is: I donโt, and I can tell you why.
โจErythritol is a sugar alcohol which your body canโt digest.โจ
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

Can you freeze these & is so, how long??
OMG! Good! At first, I didnโt think it would come together, but I kept mixing as Uliana instructed, and it was fine. I used Splenda, and pressed it with the spoon in the bowl to make it more fine. Very chocolatey and rich.

I really enjoyed these brownie bombs. Made them today as I just started keto again 4 days ago. I will be in a wedding over July 4th weekend and want to drop a few pounds. I know from past experience with keto that I have trouble getting enough fat each day. I know I also need some treats when first starting out as I’m craving sugar so these really serve both needs very well. Thanks for sharing your recipe!

Can these be frozen?? I am trying to make a bunch of bites for postpartum and I want to try freezing the recipe without ruining them!

Unfortunately, I have an almond allergy and I read in the comments that coconut flour would not work because it will soak up all the moisture. What other flour would you recommend using?

I think the best substitute would be macadamia nut flour.
You could also try to use sunflower seed flour, but it could affect the taste of the recipe.
Another option would be to skip the flour altogether.
I usually include it in my recipes for a better structure, but you could also try to omit the flour if you have a silicone mold that you can use for this recipe.
You won’t be able to form the balls with your hands if you skip the flour (hence the silicone mold), but I think the taste of the final brownie bites would still be pretty good!

Is it possible to use powdered stevia in this recipe?
Hey!
Unfortunately, I never tried powdered stevia for this recipe myself so I can’t give a guarantee that it’ll work.
It depends if the stevia is a powder extract or mixed with some kind of filler sweetener (e.g. erythritol) because the sweetener also adds volume in this recipe.
It’s usually an extract sweetener if you only need a very small amount.
If that’s the case, I wouldn’t try it but if it’s mixed with something and a 1:1 sugar replacement it might be worth a try.

I made these tonight for me and my diabetic husband to try….i used the pyure organic stevia….idk about the granules….i might add more vanilla next time! But they were good except for that!
More vanilla is always a great idea, haha! ????

Just made these and wanted to say thank you for a fabulous recipe! I had granulated swerve so I put about 2T in my blender which powdered about half of it. The rest of it tasted just like the crunch of sugar in my beloved regular brownie batter which Iโve been missing! I *may* have eaten the whole bowl without making it into balls. Haha. Will definitely make again!

YUM! i made a double batch of these yesterday, following recipe to the letter (well, I did inadvertently put in 6 TABLEspoons of cocoa originally, but scooped about half of it out ????, so they might be a little extra cocoa-y!!)
The sweetener I used is the large crystals and I have to say, these are very yummy…and for me, the crunchiness of the large sweetener is a nice little surprise in each nibble. I might try adding a little almond or peanut butter next time, just for fun.
Iโve been eating keto for three months and sometimes I just need a little something like these, so thank you!

It depends on how much you want to add.
If you want to add only a small amount (up to a tsp) it should work without changing the other ingredients.
If you want to add more, I’d increase the butter so the mass won’t become too dry and falls apart.

So I donโt know what I did wrong! Taste awesome but I had a crumbly mess… suggestions? Should I use an electric mixer?
What would be a good substitute for erythritol? Powdered sugar? It doesnโt have to be keto-friendly. Iโm not keto, but Iโm trying to find fatty snacks for my daughter who is very underweight. I was hoping there was something functionally similar to erythritol that might already be in my pantry.
I never tried it myself, but I don’t see a reason why powdered sugar won’t work.
It’s definitely worth a try! ๐
You might need to add a bit less of the powdered sugar though because powdered erythritol isn’t as sweet as powdered sugar.
Maybe start with 2 tbsp of powdered sugar instead of 3 tbsp of powdered erythritol and taste the mass before oversweetening it.
It’s always easier to add more. ????

Can I use coconut flour instead of Almond?? Would the measurement remain the same?

I usually recommend coconut oil instead of butter for most of my recipes, but I donโt think itโs a very good fit for this exact recipe.
If you donโt have a problem with a slight coconut taste in your brownie bites, it might be worth a try though!
Depending on how severe your intolerance is, you could also try to use ghee. Thatโs basically cleared butter and as far as I know itโs pretty much lactose free, even though it can contain traces which can be a problem for people with a severe lactose intolerance.
The most important thing is that the fat is solid in cold temperatures, because otherwise the brownie bites wonโt stay in shape.

I made these for the first time today and I have to say this is a very stingy recipe. I doubled the recipe and it only made 14 small balls. Iโm making these for a party and inorder to make at least two dozen the recipe has to be quadrupled. With that being said it becomes expensive. Also would have appreciated if you would have noted how many recipe makes

I’m sorry you had trouble with the recipe.
But if I can be honest, I’m a bit confused by some parts of your comment and it would be really great if you could clarify those for me!
I would love to help you out if I can.
The amounts given on the recipe card yields 6 brownie bites that are all approx. 3 cm or 1.2โ in diameter and weigh about 15-16g or about 0.5oz each.
So if you doubled the recipe and got 14 balls out of it, it seems like just the range of balls that the recipe should yield.
The serving size of 6 balls is stated on the recipe card and that’s how many I personally got from the recipe.
If each of your balls is smaller or bigger you may get additional balls or fewer balls.
I usually cater my recipes to people who are on the ketogenic diet and look for a quick keto-friendly snack that they can make for themselves.
It’s not that common for a whole family to be on the ketogenic diet, that’s why the amounts given for my recipes are mostly targeted to satisfy one person or maybe two.
If you make these bites for a party, you would have to multiply the amounts given by at least 4 or even more, that’s true – but as I stated before, I didn’t intend this recipe to be made as a party appetizer but as a snack for one person.
In regards to the recipe getting expensive, I can definitely see that as almond flour and erythritol are both very expensive ingredients.
But to be honest, I don’t think it’s necessary to make ketogenic treats as a party snack if not a lot of your attendees are on the ketogenic diet.
In my experience, most people don’t care that much if they aren’t on a low carb diet themselves.
Sugar and normal wheat flour are much more frugal choices in that regard.
That’s kind of sad but also the truth.
Maybe you can save some money by making one part keto balls and one part with wheat flour and sugar?
And I did state how many balls the recipe makes. It’s stated on the recipe card and I even included the average weight of each ball as well…

Finally JUST made these! Fresh home from an exhaustive snowshoe excursion and beat but craving a sweet and not much of a brownie person, unless they are my mom’s. However, no flour=valid consideration. My phone WAS dead so made from rote memory from reading the recipe so much these last 2 weeks. I used 3Tbs of everything except vanilla (2 drops) and Cacao (2 Tbs, not tsp…oops). All are in the freezer except 1, which I dhad to have as they smelled SO GOOD! it did not disappoint-so damn good…wow! And so easy!!โค

Once ingredients are combined,I add the bowl in the fridge for about 10 mins to have the mixture harden up. Makes it very easy to roll into balls. Not sure if its keto, but I sometimes add in, or roll into , desicated coconut. My twins love it!

I unfortunately did not have luck with this recipe even after making it a few times. I ended up googling other versions of the recipe and they are all about the same. My adjustments/recommendations from my point of view:
1- melted butter instead of softened (softened did not work for me)
2- follow the grams vs the other measurements
it is a decent “base” recipe for a non-bake keto treat but I definitely elaborated on the original recipe and still working to perfect it!

The mixing process with the melted butter is probably easier than with the softened butter.

If I don’t do this, it’s a lot harder for me to combine the ingredients to the degree that is needed for this recipe to work.
It’s a bit difficult for me to explain the process for me, but it’s shown in the instruction video for my raspberry keto fat bombs which should be embedded in the post.
I should probably add that to the recipe instructions as well, thank you for bringing it to my attention!
As a European, I always prefer the gram measurements over the imperial measurements because it is a lot more accurate.
Most of my readers reside in the US which is why I always include US measurements as well, but in a recipe that uses only small quantities like this one small inaccuracies can cause unexpected results.

How big do these turn out to be? It says 6 servings but when I made them it was about 4 and maybe 1tsp in size each?

The weight of each bite was approx. 15-16g or about 0.5oz.
It sounds like there may be something missing? Maybe you accidentally overlooked an ingredient?
