Recently I published the recipe for these keto cinnamon rolls fat bombs and after I devoured all of them in the first two days, I still hadn’t got enough.

And then it dawned on me: I need a keto cinnamon roll mug cake.
Of course, not as labor-intensive as real cinnamon rolls, but a “good enough” version that’s super quick and easy, and tastes similar to the original.

And now, after a few botched attempts, I proudly present my keto version of a cinnamon roll mug cake – cream cheese topping included.

Keto mug cakes are my go-to option whenever I want to eat something sweet and filling.
I also like to eat them to increase my fiber intake – the coconut flour and almond flour add a good amount of fiber to my diet which I personally struggle to get enough of.

BTW, they’re also a great option for a sweet keto breakfast whenever you don’t want to have eggs in the morning!

    KETO CINNAMON ROLL MUG CAKE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!)
     

  • finely ground coconut flour
  • finely ground almond flour
  • (brown) erythritol:
    You don’t have to use brown erythritol for this recipe if you don’t have it at home already, but I highly recommend it!
    The malty taste is absolutely perfect for this keto “cinnamon roll” mug cake.

    I got my brown erythritol from a local brand in Germany and unfortunately, it’s not available in the US.

    I haven’t tried both of the following products myself but the reviews are very good so I feel confident in suggesting them to you:

    1. Golden Monk Fruit Sweetener
    (I really want to try monk fruit sweetener myself but it doesn’t ship to Germany!
    Hopefully, I can get my hands on it when I’m in the US next year.)

    2. Sukrin Gold Brown sugar substitute
    (This is pretty close to the product I used but it differs in the fact that this is a 1:1 replacement for sugar whereas the erythritol I used is only 70% as sweet as sugar.
    I adjusted the amounts you would have to use if you use a 1:1 replacement in the recipe card!)

    Why erythritol?
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.

  • butter or coconut oil: I used melted butter for this recipe because in my opinion, it’s a better match for the “cinnamon roll” part of this mug cake but you can swap it with coconut oil if you’re paleo.
    It’ll taste slightly different but still delicious!
  • eggs: one whole egg
  • almond milk: unsweetened
  • baking powder: look for a gluten-free version without corn starch for paleo-friendly option or make your own one!
  • sugar-free vanilla extract
  • (ceylon) cinnamon: I recommend using ceylon cinnamon instead of cassia cinnamon.
    Ceylon cinnamon is more aromatic and has a higher quality than cassia cinnamon.
  • CREAM CHEESE TOPPING:

    Not necessary, but highly recommended because super delicious! ????

  • full-fat cream cheese
  • heavy cream
  • powdered erythritol

    HOW TO MAKE A KETO CINNAMON ROLL MUG CAKE:

     
    1. Mix the ingredients:
    Add all of the ingredients for the mug cake base into a mug or bowl that’s oven- and/or microwave safe.
    Whisk until you get a smooth and chunk-free dough.

    Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I usually use coconut oil, butter or avocado oil to do this).

     
    2. Bake…
    …in the microwave:
    Microwave for about 1-3 minutes.
    The cooking time in your microwave may vary heavily depending on what microwave and what settings you’re using.

    A broad rule of thumb: Approx. 1 Minute at 1200 Watt and more like 2-3 minutes at <600 Watt.

    If you don’t know the Wattage power of your microwave I’d recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed.

    This will avoid that the mug cake dries out.
    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    … in the oven:
    Preheat your oven to 350 degrees Fahrenheit (180°C).
    Follow the same steps as above.
    Bake your mug cake for about 10-15 minutes.

    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    3. (Optional) Add cream cheese topping:
    Melt the cream cheese.
    I prefer to do that with a double boiler in a small bowl but you could also simply pop the cream cheese into your microwave for a few seconds until it’s melted.

    Combine the melted cream cheese with the powdered erythritol and the heavy cream.
    Make sure no chunks of powdered erythritol are left.

     
    4. Serve:
    Pour the liquid cream cheese topping over your baked mug cake and sprinkle a bit of cinnamon on top.
    Enjoy while it’s still warm as a delicious keto dessert or cover with plastic wrap and store for up to 2 days.

    Nutrition Info:

    One serving of this keto cinnamon roll mug cake (half of the mug cake) has 4.5g net carbs (12.2g total carbs and 7.7g dietary fiber), 18.5g fat, 13.8g protein and 256 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Q: How do you include Erythritol in your calculations?

    A: The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

     2 tbsp (0.5oz/16g) finely ground coconut flour
     2 tbsp (1oz/28g) pure brown erythritol or 1.5 tbsp (20g) Golden Monk Fruit Sweetener or this 1:1 brown erythritol blend)
     1 egg
     1 tbsp (15ml) unsweetened almond milk
     1 tbsp melted butter or coconut oil
     ½ tsp (gluten-free) baking powder
    Cream Cheese Topping:
     2 tbsp cream cheese
     1 tbsp heavy cream
     (optional) (ceylon) cinnamon

    Add all of the ingredients for the mug cake base into a middle-sized bowl.
    Whisk until you get a smooth and chunk-free dough.

    Grease your microwave-safe mug or bowl with cooking oil that doesn't have a strong taste (I like to use coconut oil, butter or avocado oil).

    Add your cake batter into a mug or bowl (the mug should be at least double the size of the mixed ingredients).

    Instructions: Microwave
