This recipe is one of those random experiments I like to do once in a while.
It’s literally throwing together ingredients I already have at home and tasting if the result is edible or not.
(Spoiler: Most of the time the outcome is pretty disgusting.)
But once in a while a gem like this recipe is born.
It’s not only edible, but it’s damn delicious!
And with less than 1g net carbs per ball, you can enjoy them without feeling guilty and without kicking yourself out of ketosis!
That’s what I would call a win-win situation!

KETO HAZELNUT FAT BOMBS INGREDIENTS:
This section is where I’ll give explanations and suggestions about the ingredients you’ll need for this recipe!

Both work great in this recipe!
Almond butter usually has a bit more carbs than hazelnut butter but at least where I live, hazelnut butter is a bit more difficult to find and more expensive.
Just go with what you already have at home or what’s easier to find for you!
I recommend to buy grass-fed butter – it’s higher in certain micronutrients and healthy fats and it contains a better ratio of omega-3 vs. omega-6 fatty acids.
Erythritol is by far my favorite keto-friendly sweetener!
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very natural sweet taste.
Because of the natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.
Even though I’m a little biased towards erythritol, I’m not discriminating against other keto-friendly sweeteners that won’t spike your blood sugar.
Keep in mind though, that you might have to adjust the amount used because erythritol isn’t as sweet as other sweeteners out there.
Erythritol is about 70% as sweet as normal table sugar whereas other keto-friendly sweeteners like monk fruit and stevia are usually much sweeter than sugar.
Keep this ratio in mind when using other sweeteners and adjust accordingly.
HOW TO MAKE KETO HAZELNUT FAT BOMBS:
Make these super easy keto hazelnut fat bombs with <1g net carbs whenever sweet cravings strike you! Delicious and 100% suitable for the ketogenic diet!
Mix all of the ingredients in a middle-sized bowl until you get a smooth and chunk-free mass.
Chill the mass in your freezer for approx. 10-15 minutes until the mass is solid enough to be able to form balls.
Scoop out a small amount of the mass and roll it in between your hands until you get a small ball.
Roll the balls in ground hazelnuts for the final touch.
Chill the balls in your fridge for 30 minutes before enjoying them!
Enjoy with a cup of coffee or tea!
Cover with plastic wrap and store in your fridge for up to a week.

Q: How do you include Erythritol in your calculations?
A: The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
