Simple cream cheese desserts like this one are some of my favorite treats while on the ketogenic diet.
I do love more my other, a bit more labor-intensive keto desserts like this keto strawberry pie or my keto vanilla ice cream, but I don’t always have the time to make a treat from scratch that takes a lot of time.

Recipes like this one are the perfect fit for those situations.
They are super quick to make and leave me fully satisfied while keeping me in ketosis.

One serving (1/2 jar) of this keto lemon curd cheesecake in a jar only has 2.2 of net carbs and even though the “Lemon Curd” part may make you think this is a difficult recipe – I can assure you it’s really easy!

    KETO LEMON CURD CHEESECAKE IN A GLASS INGREDIENTS:

    This section is where I share a few tips and suggestions regarding the ingredients you’ll need for this recipe.
    You can find the exact amounts needed on the recipe card at the end of this post!

  • lemons:
    Zest of one lemon and juice of two lemons
  • full-fat cream cheese
  • heavy cream:
    You can also skip the heavy cream if you don’t like heavy cream or don’t have it at home right now, but I highly recommend adding it.

    It’ll make the “cheesecake” part of the recipe fluffier (and thus more delicious)!

  • powdered erythritol
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other powdered keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Simply taste a tiny amount of the blueberry fat bomb mass before oversweetening it and adjust accordingly.

    Attention lemon lovers who are on the ketogenic diet! This keto lemon curd cheesecake in a jar with only 2.2g net carbs is absolutely perfect for you!

    Easy Keto Lemon Curd Cheesecake In A Jar

    Ingredients:
    Keto Lemon Curd Ingredients:
     2 egg yolks
     6 tbsp granulated erythritol (2.8oz/80g)
     1 lemon (zest of 1 lemon)
     2 lemons (juice of 2 lemons)
     1 pinch salt
     4 tbsp butter (unsalted) (1.75oz/50g)
    Keto Cheesecake In A Jar Ingredients:
     ¾ cup full-fat cream cheese (6oz/170g)
     6 tbsp heavy cream (90ml)
     4.50 tbsp powdered erythritol (1oz/30g)

    Instructions:
    1

    Add the egg yolks, granulated erythritol, lemon zest, lemon juice, butter and a pinch of salt into a large bowl.
     

    2

    Fill a pot with water, place it on your stove and set your heat to high and place the bowl on top of it.
     

    3

    Bring the water in the pot to a boil.
     

    4

    Stir the lemon curd constantly for approx. 7-8 min until the mixture thickens up.
    The consistency should be similar to jam.
     

    5

    Place the bowl in your fridge while you whip up the "cheesecake" base.
     

    6

    Add the cream cheese, heavy cream, powdered erythritol, and vanilla extract into a bowl.

    Mix with a hand mixer or eggbeater until the mixture is pale and fluffy.

    Add the no-bake cheesecake mix into suitable jars.

    Add the keto lemon curd on top of the jars and chill it in the fridge for at least 1 hour before enjoying it!

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
