Simple cream cheese desserts like this one are some of my favorite treats while on the ketogenic diet.
I do love more my other, a bit more labor-intensive keto desserts like this keto strawberry pie or my keto vanilla ice cream, but I don’t always have the time to make a treat from scratch that takes a lot of time.
Recipes like this one are the perfect fit for those situations.
They are super quick to make and leave me fully satisfied while keeping me in ketosis.
One serving (1/2 jar) of this keto lemon curd cheesecake in a jar only has 2.2 of net carbs and even though the “Lemon Curd” part may make you think this is a difficult recipe – I can assure you it’s really easy!

This section is where I share a few tips and suggestions regarding the ingredients you’ll need for this recipe.
You can find the exact amounts needed on the recipe card at the end of this post!
Zest of one lemon and juice of two lemons
You can also skip the heavy cream if you don’t like heavy cream or don’t have it at home right now, but I highly recommend adding it.
It’ll make the “cheesecake” part of the recipe fluffier (and thus more delicious)!
in my opinion, the BEST keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!
Even though I’m a bit biased towards erythritol, you can use other powdered keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Simply taste a tiny amount of the blueberry fat bomb mass before oversweetening it and adjust accordingly.

How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

Made this last night. Wow is it tart. But I did have large lemons. It would be great if you could adjust the recipe to show how much juice is in your two lemons because I think mine had way more.
It is still a delicious dessert. I replaced the granular swerve with powdered and maybe that is why the curd wasn’t sweeter. It still ended up with some crunch after refrigerating. Thanks for a great keto treat.
I loved the taste of this but the curd went granular after putting it in the fridge. It thickened nicely over the boiling water and seemed to have dissolved the erythritol when it was warm but crystallised when it cooled down
What size jars?
My daughter and I made this tonight, very yummy!!!
In the lemon curd portion of the recipe, how many tablespoons of the granulated Erythritol? This looks yummy and easy to make. Thank you for sharing!
Hey there – I’m so sorry for the late response!
I was on vacation and didn’t have the chance to answer yet.
I added 6 tbsp of granulated erythritol to the lemon curd.
Thank you for your comment!
Much love – Uliana 🙂
