Mousses and cheesecakes in a jar are some of my favorite treats on keto, first and foremost because they’re so incredibly easy to make.

My boyfriend sometimes asks for a treat in the evening and I have no problem whipping up something like this when we have nothing pre-made that’s ready to eat.

Usually we also always have all of the ingredients needed at home, making this an even better spontaneous treat to have on the ketogenic diet.

And even though it contains raspberries, one serving will only add about 5.1g net carbs to your carb count! A number that’s totally within range if you keep an eye on the remaining carbs on that day.

KETO RASPBERRY MOUSSE INGREDIENTS:

This section is where I share a few tips and suggestions regarding the ingredients you’ll need for this recipe.
You can find the exact amounts needed on the recipe card at the end of this post!

  • full-fat cream cheese
  • heavy cream
  • powdered erythritol:

    Why do I love Erythritol so much?
    In my opinion, Erythritol is the best keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.

    You can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Keep that ratio in mind when using a 1:1 sugar replacement.

  • raspberries:
    I prefer to use frozen raspberries.

    Frozen produce is usually richer in micronutrients than fresh produce because it gets harvested at the peak of their ripeness whereas fresh produce gets picked earlier to avoid spoiling of the food in transit.
    Plus: It’s available all year round!

    Another important step is to cook the raspberries for approx. 5-10 minutes until the fruit has broken down.
    This step ensures that the flavors are as vibrant as they can be and it aslo improves the consistency of the final recipe.

    KETO RASPBERRY MOUSSE RECIPE CARD:

    This fluffy and super easy sugar free keto raspberry mousse will satisfy your sweet cravings on the ketogenic diet with only 5.1g net carbs per serving!

    Sugar Free Keto Raspberry Mousse

    Ingredients:
     5 tbsp full-fat cream cheese (approx. 65g)
     4 tbsp heavy cream (60ml)
     2 tbsp powdered erythritol (approx. 12g)
     3.50 oz raspberries, preferably cooked (100g)
     1 tsp lemon juice (optional)

    Instructions:
    1

    Add the raspberries into a small non-sticking pot and cook them for approx. 5-10 min over low-medium heat until most of the water in the raspberries has evaporated.

    This step is optional but will enhance the flavor of the final recipe, thus I highly recommend cooking your raspberries.
     

    2

    Chill the cooked raspberries in your fridge while proceeding to the next step.
     

    3

    Add the cream cheese, heavy cream, powdered erythritol, and lemon juice (lemon juice is optional) into a bowl.
     

    4

    Mix with a hand mixer or eggbeater until the mixture is pale and fluffy.
     

    5

    Add the (cooked) raspberries to the bowl and give it another quick mix with an eggbeater or hand mixer.
     

    6

    Add the mix into a jar and chill in the fridge for at least 1 hour before enjoying your keto raspberry mousse.
     

    Storage:

    Close the jar with a lid or plastic wrap and store in your fridge for 2-3 days.

    How do you include Erythritol in your calculations?

    The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.
    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
