It took quite a while until I created a satisfying “keto caramel” recipe and most of the development process happened when I tried to make my Healthy Keto Snickers bars (successfully, check them out, they’re delicious!).
In the end, I found a combination that was truly delicious and tasted surprisingly a lot like caramel, even though nothing remotely close to it is contained in the ingredients.
(I got pretty great feedback regarding the keto caramel!)
Low carb cooking and baking is a LOT of fun – I’m always so happy when I find a new replacement for something “naughty” I thought I could never live without.
Caramel is one of those things.
How the heck are you supposed to turn something like caramel low carb that’s by definition a chemical reaction only happening to certain sugars?
Well, this post will teach you how!

KETO SALTED CARAMEL AND PEANUT BARK INGREDIENTS:
This section is where I share tips and suggestions for the ingredients you’ll need for this recipe.
(You can find the exact amounts needed on the recipe card at the end of this post!)
brown erythritol is the key to this recipe!
The malty flavor is what makes or breaks the “keto caramel” and I highly recommend using brown erythritol and not normal white erythritol.
I got my brown erythritol from a local brand in Germany and unfortunately, it’s not available in the US.
I haven’t tried both of the following products myself but the reviews are very good so I feel confident in suggesting them to you:
1. Golden Monk Fruit Sweetener
(I really want to try monk fruit sweetener myself as I’ve read so much praise about it but it doesn’t ship to Germany! Hopefully, I can get my hands on it when I’m in the US this year.)
2. Sukrin Gold Brown sugar substitute
(This is pretty close to the product I used but it differs in the fact that this is a 1:1 replacement for sugar whereas the erythritol I used is only 70% as sweet as sugar.
I adjusted the amounts you would have to use if you use a 1:1 replacement on the recipe card!)
Why do I love Erythritol so much?
In my opinion, Erythritol is the best keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.
You can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
I adjusted the amounts in the recipe card for 1:1 sugar replacements as well, don’t worry!
the only ingredients added should be peanuts, water and/ or salt.
If there’s anything else, it could be sugar and we don’t want that!
You will find a bit of sugar on the nutrition label even on peanut butter with no sugar added – but that’s the natural sugar from the peanuts.
No way around that.
But as soon as something else pops up, especially something you can’t pronounce, skip it.
(Fun fact: Did you know sugar has over 50 names?
A neat trick manufacturers like to use is to replace the name “sugar” with one or more of the 50 other synonyms to mislead customers.
I recommend buying grass-fed butter – it’s higher in certain micronutrients and healthy fats and it contains a better ratio of omega-3 vs. omega-6 fatty acids.
I sprinkled a bit of melted sugar-free chocolate on top of the finished keto salted caramel and peanut bark but of course, that’s optional.
HOW TO MAKE KETO SALTED CARAMEL AND PEANUT BARK:
1. Melt butter & mix with ingredients:
In a small non-sticking pot, melt the butter on low heat.
Add the remaining ingredients except for the flakey sea salt as well and mix until everything is fully combined.
2. Pour mixture onto a tray:
Pour the mixture onto a suitable tray lined with parchment paper.
It works best if the tray isn’t too big and has borders so that the melted butter won’t spread too much.
You can also use something like a casserole dish lined with parchment paper to do this.
Chill until the butter is completely solid (approx. 1 hour).
3. Sprinkle sea salt on top & cut:
Sprinkle the sea salt on top of the hardened “keto caramel” to turn it into our keto salted caramel & peanut bark and cut it into chunks.
I cut my bark into approx. 6-7 pieces.
4. Serve:
Serve just as it is or with a cup of tea or coffee!
Store covered with plastic wrap in your fridge for up to a week.
Nutrition Info:
One serving (1/6 of whole recipe) has approx. 1.6g net carbs (2.4g total carbs and 0.8g dietary fiber), 15.7g fat, 3.9g protein, and 163 calories.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.

For some reason mine comes out more like a soft fudge. It still taste amazing but I’m curious how you get the crunch of brittle? Should I be keeping it in the freezer?

I was on vacation and didn’t have the chance to answer new comments until now.
The recipe itself is a bit softer than normal caramel bark as it’s super difficult to make sugar-free caramel stuff. (Most keto ingredients don’t have the same properties of table sugar).
The peanuts are supposed to be what makes this recipe “crunchy” and the remaining ingredients are there to add the flavor and imitate the original thing as best as possible.
I’m sorry if this caused confusion!
