Whenever I made cookies with my mum when I was a child the part I was most looking forward to was snacking on the cookie dough, not eating the baked cookies.
When my mum looked away or went out of the room I would scoop out big chunks of dough and eat them before she would notice it.
And when I curled up on the couch a few hours later my mum would come by with the knowing “I-told-you-so” look on her face.
I have no idea why I liked the cookie dough so much better than the actual cookies, but this hasn’t changed even to this day.
Cookie dough is my weakness.
The only thing that has changed is that I know about the dangers of eating raw eggs and tons of flour and tend to be smarter than my 10-year old self most of the time.
Recently I spent a lot of time creating keto-friendly cookie recipes and keto fat bomb recipes and a thought struck my mind: why not combine both of these things?
A healthy cookie dough version that is keto-friendly and won’t give you bellyaches.
And that’s exactly what this recipe is.
None of the ingredients will cause you to curl up on the couch and it is an incredibly comforting snack that’ll increase your fat intake and thus help you reach and stay in ketosis more easily.

COOKIE DOUGH KETO FAT BOMBS INGREDIENTS:

in my opinion, the BEST keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!
Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well – but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Simply taste a tiny amount of the fat bomb mass before oversweetening it and adjust accordingly.
if you can’t find sugar-free chocolate chips you can also use chocolate with at least 85% cacao content as well!
Leave at room temperature for approx. 20-30 minutes for desired consistency.
HOW TO MAKE COOKIE DOUGH KETO FAT BOMBS:
1. Mix the ingredients:
Mix all of the ingredients in a small bowl or mug until you get a smooth and chunk-free “dough”.
You shouldn’t have any large chunks of flour or butter left and the chocolate chips should be distributed evenly throughout the mass.
2. Form the balls:
Optional: If your mass is too soft or sticky, chill the mass in your freezer for approx. 10-15 minutes. This will make forming the balls easier.
Separate the mass into 4-5 equal parts and roll them in between your hands until you get smooth, round balls.
3. Serve:
Eat right away like true cookie dough or store in your fridge covered with plastic wrap for approx. 4-5 days.
In my opinion, the fat bombs taste best when warmed up a bit, the butter will provide more flavor that way.
I recommend leaving your fat bombs at room temperature for approx. 15 minutes after you got them out of your fridge for the best flavor.

Nutrition Info:
One cookie dough keto fat bomb (approx. 0.6oz/17g) has 1g net carbs (2.3g total carbs and 1.3g dietary fiber), 8g fat, 2.4g protein and 90 calories.
I used dark chocolate sweetened with erythritol from a local brand in Germany for these calculations. Lily’s chocolate chips have a very similar amount of carbs to the one I used, but keep in mind that the values may change if you use a different chocolate.
How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

You can try replacing the butter with coconut oil. The texture and taste might vary though. I hope that helps.

I made this using Swerve and a nut flour blend and it is actually pretty good! I never use sugar substitutes and just skip sweets. I’m happy to have found something to satisfy my sweet tooth.
