Even though pistachios aren’t the most keto-friendly nuts out there, I still like to include them in my diet.


They are a bit higher in carbs than other nuts but if you don’t go crazy on them you can still have them, even when you’re doing the ketogenic diet!



These little pistachio keto fat bombs are incredibly delicious and 100% keto-friendly with only 1g net carbs per serving.


And don’t they look absolutely gorgeous?
The green color is completely natural and comes only from the ground up pistachios –
no food coloring or photoshop tricks.



You can whip them up in literally 5 minutes and enjoy them within an hour.

They keep at least a few days without spoiling so they’re also great if you want to include a small & sweet keto snack in your meal prep.

    PISTACHIO KETO FAT BOMBS INGREDIENTS:

    (You can find the exact amounts needed in the recipe card at the end of this post.

    The recipe yields only 4 fat bombs because I feel they’re quite intense and it will get boring to eat the same fat bombs every day.
    But of course, you can double the recipe if you want a bigger batch!)

  • pistachios:
    ground up – if you don’t have a food processor you can also just chop them up with a knife.
  • butter or other suitable fat substitute:
    I used softened butter for this recipe, but you can easily turn it vegan and paleo by switching the butter with coconut oil.

    I highly recommend using coconut oil instead of liquid plant oils because the fat bombs won’t stay in shape if you use liquid oil.

    Butter and coconut oil both harden at cold temperatures and this in turn keeps the fat bomb from turning into a puddle of mush.

  • almond flour: the almond flour will bring additional texture to the fat bombs.
  • granulated erythritol:
    in my opinion, the BEST keto-friendly sweetener.
    – it doesn’t spike your blood sugar,
    – it’s completely safe and
    – has a very fresh & natural sweet taste.

    Because of it’s natural origin and natural production process (fermentation with a certain kind of yeast) I also consider erythritol to be paleo-friendly!

    Even though I’m a bit biased towards erythritol, you can use other granulated keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.

    Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
    Simply taste a tiny amount of the fat bomb mass before oversweetening it and adjust accordingly.

  • lemon juice: optimally, pressed from a fresh lemon

    HOW TO MAKE PISTACHIO KETO FAT BOMBS:

     
    1. Ground the pistachios:
    Add the pistachios to a food processor and blend for approx. 20-30 seconds.
    The pistachios don’t have to be super fine but there shouldn’t be any big chunks left.

     
    2. Mix with remaining ingredients:
    Mix the ground pistachios with the remaining ingredients until you get a smooth mass.

    The mass should be solid enough to form the balls right away, but depending on how soft the butter was that you were using you might want to chill the mass for 10-15 minutes in the freezer for easier forming of the balls.

    Separate the mass into four parts and roll the balls in between the palms of your hands.

    Optional: Roll the finished balls in granulated erythritol or ground pistachios to add a bit of decoration.

     
    3. Chill & Serve:
    I’d recommend chilling the fat bombs for at least. 1 hour in the fridge before consuming them.
    But you can also eat them right away, your choice!

    Enjoy these little pistachio fat bombs as a quick keto snack or treat!

    You can store the fat bombs covered with plastic wrap in your fridge for approx. 3-4 days.

    Nutrition Info:
    One ball has 1.0g net carbs (1.9g total carbs and 0.9g dietary fiber), 4.5g fat, 2.1g protein, and 54 calories.

    Q: How do you include Erythritol in your calculations?

    A: The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.

    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do. 

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Keto Pistachio Fat Bombs

     1 ½ tsp (10g) softened butter
     ½ tsp lemon juice

    Mix all of the ingredients in a small bowl until you get a smooth, green mass.

    (Optional) Place the mass in your freezer for 10-15 minutes.
    This will make forming the balls a lot easier.

    Scoop out 1/4 of the mass at a time and roll small balls with your hands.

    Optional: Roll the balls in ground pistachios for a bit of decoration.

    Chill in the fridge for 1 hour before enjoying them!
