This is one of those recipes that I remember eating even as a very young child.
I have known this exact cucumber and tomato salad for such a long time that I could make a batch while sleeping.
Thanks to coincidence this salad is also absolutely keto-friendly and one of the best keto side dishes I know!
Especially during the summer months my boyfriend and I make this creamy keto cucumber tomato salad almost every other day.
The creamy garlic salad dressing, the fresh taste of the cucumber paired with the sweetness of the tomatoes is such a delicious combination.
One huge serving only has about 8.5g net carbs – which is a considerable amount but it’s still in a very keto-friendly range.

CREAMY KETO CUCUMBER & TOMATO SALAD WITH GARLIC DRESSING INGREDIENTS:

CREAMY KETO CUCUMBER & TOMATO SALAD WITH GARLIC DRESSING RECIPE CARD:
This creamy keto cucumber & tomato salad with delicious garlic salad dressing will surely become one of your favorite salad recipes on the keto diet!
Wash the cocktail tomatoes and the cucumber.
Cut both into small pieces and add them into a large salad bowl.
In a separate bowl, mix the creme fraiche, water, chives, parsley, salt, and pepper.
Add the garlic clove as well by pressing it through a garlic press.
Pour the garlic creme fraiche dressing over the cucumber tomato salad and mix thoroughly.
Enjoy!
I recommend eating the salad on the same day.
If you are making the salad for yourself and don't plan to share it with someone, make only half of the recipe.
