Ok, these keto peanut butter cookies are so incredibly easy I feel almost guilty making a blog post explaining how to make them.
You literally need only 3 ingredients and they’re done within 20 minutes.
Say what?
I know, it’s crazy.
I looove easy recipes and I always try to make sure that my recipes are easy as well.
Sometimes I also like to go for a bit more complicated stuff but that’s definitely the exception.
These little guys might take the throne of easy keto treats.

KETO PEANUT BUTTER COOKIES INGREDIENTS:
I absolutely love how easy this recipe is. You literally only need 3 ingredients, + one optional one!
(You can find the exact amounts needed on the recipe card at the end of this post!)
the only ingredients added should be peanuts, water and/ or salt.
If there’s anything else, it could be sugar and we don’t want that!
You will find a bit of sugar on the nutrition label even on peanut butter with no sugar added – but that’s the natural sugar from the peanuts.
No way around that.
But as soon as something else pops up, especially something you can’t pronounce, skip it.
(Fun fact: Did you know sugar has over 50 names?
A neat trick manufracturers like to use is to replace the name “sugar” with one or more of the 50 other synonyms to mislead customers.
my absolute favorite keto-friendly sweetener!
– it doesn’t spkie your blood sugar,
– it’s completely safe and
– has a very natural sweet taste that I personally really like.
Because of its natural origin and natural production process (fermentation with a certain kind of yeast) I do consider erythritol to be paleo-friendly.
Of course, you can use other powdered keto-friendly sweeteners as well!
Keep in mind though, that you may have to adjust the amount of the sweetener added.
Erythtirol is about 70% as sweet as sugar whereas other keto-friendly sweeteners such as monk fruit or stevia are much sweeter than sugar.
the vanilla extract is totally optional and not neccessary for the recipe – I just live for vanilla extract and add it to almost everything I make.
Do I may have an addiction? Maybe. Just maybe.
HOW TO MAKE KETO PEANUT BUTTER COOKIES:
1. Mix the ingredients:
Preheat your oven to 350°F/180°C.
Mix all of the ingredients in a large bowl until you get a smooth and chunk-free dough.
2. Make the cookies:
Form equally sized balls from the dough (I got about 16 from the recipe), place them on a baking tray lined with parchment paper and press them down with the palm of your hands.
Take a fork and gently press on the cookies to make a criss-cross pattern.
☝︎ Make sure to leave a little bit of space in between the cookies because they will spread out a bit.
Not too much, but I’d leave about an inch in between the cookies to avoid that they combine and become one huge cookie.
3. Bake in the oven:
Bake in preheated oven for approx. 8-12 minutes.
☝︎ Don’t worry if the cookies appear “mushy” when they are freshly out of the oven, that’s totally normal and they’ll harden once they cool down.
4. Serve:
Let cool down completely before enjoying with a hot cup of tea or coffee!

Nutrition Info:
One keto peanut butter cookie (approx. 0.6oz/20g) has 2.4g net carbs (2.4g total carbs and 0g dietary fiber), 8.2g fat, 4.3g protein and 102 calories.
How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
(I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)
