One thing I love to do in my free time is to find high carb recipes I enjoy eating and try creating a low carb version.
It’s always a great pleasure when I make something that’s a success and it doesn’t taste like “low carb food”.

This recipe is definitely one of the successes.

If you’re American you probably don’t know what a “Tarte Flambée” or “Flammkuchen” is but as a German, I’m very familiar with the concept.
The “normal” version of this recipe originated in the south of Germany/ east of France (Alsatian region) and it’s such a mess that you can’t really determine if it’s a traditional French or German dish.
For the sake of diplomacy, it’s both for me.

I guess you could describe it as a pizza but it’s a lot more delicate.
The dough is usually extremely thin and crispy and you can find it topped with a lot of different things, even though this bacon & onion one I’m about to share with you is probably the best known.

If you have no idea what a Tarte Flambée is – don’t worry and just try the recipe!
I’m sure you will appreciate how good it tastes even if you’ve never tasted “the original”!
It’s a super comforting dish and I love how this one turned out.
I will definitely do it again!

Oh, and of course, like all my recipes it’s low carb and keto-friendly:
one slice of this tarte flambée only has 3.7g net carbs!

 
Keto Tarte Flambée (French Onion & Bacon Keto Pizza) - Low Carb, Keto Dinner Recipe
 

KETO TARTE FLAMBÉE INGREDIENTS:

(You can find the exact amounts needed in the recipe card at the end of this post.)

 

FOR THE DOUGH:

The dough for this keto tarte flambée is actually just the same fathead pizza crust I used for my Keto Pizza recipe. It’s super simple and versatile.
The only change I made is that I added a bit of water to make the dough more flexible.
 

  • finely ground almond flour
  • shredded mozzarella cheese
  • full fat cream cheese
  • an egg
  • water
  • seasonings: salt, pepper
  •  
    FOR THE TOPPING:

  • sour cream & creme fraiché: full fat
  • bacon: I used some cubed bacon for this recipe.
  • onion: cut in half and sliced
  • seasoning: salt, pepper

    HOW TO MAKE THIS KETO TARTE FLAMBÉE:

     
    1. Melt the mozzarella and cream cheese:
    In a large bowl, melt the shredded mozzarella cheese and the cream cheese.
    You can use a microwave, oven or double boiler to do this:

    If you use a microwave: Microwave the bowl with the mozzarella and cream cheese for approx. 1-2 minutes. (the time may vary heavily depending on the microwave and what settings you’re using – start with a shorter amount of time and pop it back in if it hasn’t melted yet. Avoid overcooking, we don’t want the cheese to brown.)
    You should aim for a smooth & pale mass.

    If you use your oven:
    I actually used my oven before and it worked fine as well, it just takes a bit longer and you have to keep an eye on your cheese so it doesn’t start to brown.
    Set your oven to about 250°F/120°C and stir the cheese every few minutes. It can take up to 20 minutes for the cheese to melt completely.
    You can set the temperature higher if you don’t want to wait that long but make sure to watch it closely if you do.

    If you use a double boiler: Set up your double boiler and stir the mozzarella cheese while it’s melting.
    It takes a while for the mozzarella cheese to melt completely, approx. 5-10 minutes.
     
    2. Mix the dough:
    Add the flour, egg, water, and seasoning to the melted mozzarella cheese and knead the dough with your hands until you get a smooth mass.
    (If the cheese is too hot, start mixing with a spoon until it’s cold enough to knead with your hands.)
    I’d recommend to add the almond flour in several small portions, not all at once.
    Place the dough onto a sheet of parchment paper and add another layer of parchment paper on top.
    Use a rolling pin to roll the dough as flat as possible.
    You should aim for a very thin dough, not more than approx. 1/5″ thick (0.3cm).
    To prevent bubbles in the dough, prick the surface slightly with a fork before putting it into the oven.

     
    3. Bake the dough:
    Bake the dough without the topping for approx. 7-10 minutes at 350°F/180°C.

    While the dough is in the oven, cut the onion in half and slice it.

    Take the dough out of the oven and spread the creme fraiché and sour creme evenly on top of it.
    Add the sliced onion as well as the bacon. Season with salt and pepper.
    Pop the tarte back into the oven for another 10 minutes.
     
    4. Serve:
    Cut into 9 slices and enjoy while still warm!

    One serving (1 slice) of this keto tarte flambée (whole tarte = 9 slices) has 3.7g net carbs (5.6g total carbs and 1.9g dietary fiber), 17.1g fat, 17.5g protein and 243 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

     ½ cup water
     1 egg

     3.50 oz (100g) sour creme
     4.50 oz (125g) bacon
     1 onion, sliced
