This hearty cauliflower casserole with ham and low carb Bechamel sauce is the definition of comfort food!

 1 (approx. 500g) cauliflower head
 0.50 lb (250g) ham
 4 tbsp (60g) butter
 1 ¾ cups (200g) full fat cream cheese
 1 cup (200ml) heavy cream
 1 pinch nutmeg
 salt, pepper
 shredded cheese
 fresh parsley

Clean the cauliflower head.
Remove the florets from the head and put them into boiling salt water.
Cook the florets until fork tender (approx. 10 minutes).

Drain the water from the pot and transfer the cauliflower florets into an oven-safe casserole dish.
Add the ham as well.

Optional: Fry the ham for a few minutes. I didn’t fry the ham because I don’t like the taste of it. If you decide to fry the ham, be careful with the salt you add because the fried ham has a heavy salty taste.

Preheat the oven to 390°F/200°F.

Add the butter to a small pot and melt it.
Add the cream cheese and the heavy cream as well and heat on low to medium heat until the cream cheese has melted.
Season the sauce with salt, pepper and a pinch of nutmeg.

Pour the low carb Bechamel sauce over the cauliflower florets and the ham.
Top the dish with shredded cheese of your choice.

Bake in the oven for 20 minutes

Serve warm with fresh parsley on top.
