Keto Butter Chicken Curry (Easy & Family-Friendly Keto Dinner Recipe)

Keto Curry Ingredients:
 1 lb (450g) chicken filet
 13.50 fl oz (400ml) coconut milk (1 can)
 1 (250g) red bell pepper
 5.50 oz (150g) broccoli
 1 (approx. 50-60g) small onion
 1 (approx. 50-60g) small carrot or 1/2 of a big carrot (optional)
 0.25 oz (10g) ginger
 1 garlic clove
 a handful of cashews (approx.1oz/30g) (optional)
Seasonings:
 1 tbsp (14g) red curry paste
 1 tsp coriander powder
 1 tbsp curry powder
 salt, pepper to taste
Serve with:
 1 cup (3.5oz/100g) cauliflower rice (per serving)
How to make Keto Coconut Chicken Curry:

Peel and chop your onion, garlic, and ginger.

Cut your chicken breast or fillet into bite-sized pieces.

Chop the bell pepper and broccoli as well.

Add the chopped onion, garlic, ginger and a bit of cooking oil into a large frying pan and fry on high heat for 2-3 minutes until translucent.

Add the chicken to the pan as well and fry for 1-2 minutes from all sides.

Add the curry paste and fry it too for approx. 1 min.

Deglaze everything with coconut milk.

Add the chopped bell pepper & broccoli as well.
Stir.

Season with chicken masala spice mix, curry powder, coriander powder, and salt and pepper.

Reduce the heat and cook for approx. 20 minutes on low to medium heat.
While the curry is simmering, prepare the cauliflower rice:
 

How To Make Cauliflower Rice:

Remove the florets from your cauliflower head and chop them roughly.
Add them into a food processor and blend for 30-45 seconds or until no big chunks of cauliflower are left.

Add the raw cauliflower rice into a large frying pan.
Add 1-2 tbsp of ghee or a heat resistant cooking oil and fry on medium-high for approx. 5 minutes.
Make sure to stir the cauliflower rice!
Add salt to taste.
 

Serve:

Serve the keto coconut chicken curry with one serving of cauliflower rice.

This recipe is great for meal prepping as it keeps fresh for up to 5 days.
I'd recommend storing the cauliflower rice and the keto curry separately to avoid any sogginess creeping in.
