
Peel the carrot and onion.
Dice the onion and grate the carrot or cut the carrot into thin strips.
Remove the outer leaves of the cabbage, quarter it and remove the stem.
Cut the cabbage into thin strips and set it aside for now.
Dice the tomatoes.
Melt the butter in a large pot and add the onion as well as the carrot.
Fry the onion and carrot for about 5 minutes at medium to high heat until it becomes translucent.
Add the tomatoes to the pot and fry them for about 5 minutes.
Add the ground beef to the pot as well and fry for 5-7 minutes, until it's brown and crumbly.
Add the cabbage to the pot, stir well and deglaze with the water.
Let the soup simmer with a closed lid for about 20-25 minutes until the cabbage is fork tender.
Add salt and pepper to taste and serve with a bit of sour cream or creme fraiche.
Store the low carb ground beef & cabbage soup in an airtight container in your fridge for up to 3 days.
