Who said you can’t have the cake and eat it too?
With this apple cinnamon keto mug cake, you definitely can!

It’s so moist and comforting… it’s definitely one of my favorites and I made quite a few ketogenic mug cakes in my life!

You might be wondering how this apple mug cake can be ketogenic if it contains real apples but my answer regarding stuff like this is always the same: you can have “non-ketogenic” foods if you don’t overdo it.

You can eat everything you want but you have to account for it.
My secret for this ketogenic apple pie mug cake?
There’s only enough apple in there to make it taste like apple pie but not enough to kick you out of ketosis.

While this cinnamon apple pie mug cake is definitely one of my higher carb ones, it’s still super low carb with only 4.9g net carbs per serving!
That’s only a tiny bit more than most of my other mug cakes and still super low carb!

We won’t be using a whole apple so if you’re living alone and don’t have anyone in your household who can eat the rest of the apple, you might be better off making one of my other keto mug cake recipes.
There’s plenty of them!

    CINNAMON APPLE PIE KETO MUG CAKE INGREDIENTS:

    (You can find the exact amounts needed on the recipe card at the end of this post!)
     

  • finely ground coconut flour
  • finely ground almond flour
  • erythritol: my absolute favorite keto-friendly sweetener! But you can use other granulated, keto-friendly sweeteners as well. (Make sure to adjust the amount if you use something else!)

    ☝︎ Because of its’ natural origin, I do consider erythritol to be paleo-friendly.

  • butter or coconut oil: I used melted butter for this recipe because in my opinion, it fits better with the “apple pie” but you can still use coconut oil if you’re eating paleo. It’ll taste slightly different but still delicious!
  • eggs: one whole egg
  • almond milk: unsweetened
  • baking powder: look for a gluten-free version without corn starch for paleo-friendly option or make your own one!
  • apple: grated & chopped (see instructions)
  • cinnamon: I recommend ceylon cinnamon over cassia cinnamon.
    Ceylon cinnamon is more aromatic and has a higher quality than cassia cinnamon.
  • (optional) powdered erythritol: I sprinkled a bit of powdered erythritol over my mug cake but you can simply skip that part if you don’t have it at home because it’s mainly for decoration purposes.

    HOW TO MAKE A CINNAMON APPLE PIE KETO MUG CAKE:

     
    1. Mix the ingredients:
    Grate half of your 1/4 apple.
    Chop the other half into small cubes.

    Mix all of the ingredients except for the powdered erythritol in a small mug or bowl that’s oven- or microwave safe.
    Whisk until you get a smooth and chunk-free dough.

    Grease your microwave- or oven-safe mug with a plant oil or oil spray that doesn’t have a strong taste (I usually use coconut oil or butter).
    Add your cake batter into a mug (the mug should be at least double the size of the mixed ingredients).
     
    2. Bake…
    …in the microwave:
    Microwave for about 60-90 seconds.
    (The cooking time in your microwave may vary heavily because of different microwaves and settings used – I recommend baking your mug cake for a shorter time period (60 seconds) first and continue baking for a few more seconds if needed. (To avoid dryness.)

    You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
     
    … in the oven:
    Preheat your oven to 350 degrees Fahrenheit (180°C).
    Follow the same steps as above.
    Bake your mug cake for about 10-15 minutes.

    3. Serve:
    Sprinkle with a bit of powdered erythritol (optional) and serve warm or cold!

    Nutrition Info:

    One serving of this keto mug cake (half of the mug cake) has 4.9g net carbs (9.7g total carbs and 4.8g dietary fiber), 10.3g fat, 8.7g protein and 158 calories.

    (I try to be as accurate as possible with this information, but values may vary because of natural occurring fluctuations and different products used.)

    Q: How do you include Erythritol in your calculations?

    A: The short answer is: I don’t, and I can tell you why.

    
Erythritol is a sugar alcohol which your body can’t digest.

    If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).

    It passes through our system basically “untouched”.
    Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
