This super easy keto peanut butter mousse is for all of you who are looking for a super delicious keto peanut butter treat that doesn’t take a lot of work!
It’s whipped up in literally 5 minutes and after about half an hour in the fridge, it has a perfect consistency.
(But I don’t judge you if you decide to dig into it right after making it – I’ve been guilty of this sooo many times before!)
With only 3.6g net carbs and no added sugars, it is the perfect treat to satisfy your sweet cravings while still staying fully focused on your weight loss goals on the ketogenic diet.

KETO PEANUT BUTTER MOUSSE INGREDIENTS:

Make sure the peanut butter you use doesn’t contain added sugar.
Even all-natural peanut butter does contain a bit of sugar/carbs on its’ own (about 13g of carbs/100g), but that’s natural sugar/carbs from the peanuts and nothing we can get around.
Just make sure the only ingredients are peanuts, water, and salt and you’re good to go.
Why do I love Erythritol so much?
In my opinion, Erythritol is the best keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of its natural origin and natural production process (fermentation), I also consider erythritol to be paleo-friendly.
You can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Keep that ratio in mind when using a 1:1 sugar replacement.
I really like to top my keto peanut butter mousse off with a small amount of chopped peanuts – it just makes the whole thing a bit more crunchy.
Psst, if you like it a little bit more exciting, I recommend adding salted peanuts on top. It’s definetly a guilty pleasure of mine – but not everyone might like it.
KETO PEANUT BUTTER MOUSSE RECIPE CARD:
This super easy sugar-free keto peanut butter mousse will satisfy your sweet cravings on the ketogenic diet with only 3.6g net carbs per serving!
Add all of the ingredients into a large bowl and mix with a hand mixer or egg beater until you get a smooth mass.
Transfer the mousse into a small jar or glass and top it off with a handful of chopped peanuts.
For the best taste, chill in your fridge for at least 30 minutes before enjoying your keto peanut butter mousse.
Close the jar with a lid or plastic wrap and store in your fridge for 2-3 days.

How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this, you can subtract the carbs from erythritol completely, which is what I always do.
