These keto salami & cheddar breakfast muffins have been the hit in the last few weeks in our household.
They’ve been the go-to option whenever we wanted a quick and uncomplicated keto breakfast and recently they also proved they’re an amazing keto travel snack!
Simply make a batch, put the muffins into an air-tight container and they’ll easily get you through a long drive.
One muffin only has 1.7g net carbs so you could even eat a dozen of them without kicking yourself out of ketosis.
They’re also super moist and not dry at all (I had to bake a lot of batches to actually find a good ratio of the ingredients so that the muffins weren’t too dry!), absolutely delicious and will keep you full for a long time!
Whip them up in a few minutes with ingredients you probably already have at home!

HOW TO MAKE KETO SALAMI & CHEDDAR BREAKFAST MUFFINS:
These keto salami & cheddar breakfast muffins are a great quick & easy keto breakfast or keto travel snack with only 1.7g net carbs per muffin!
Preheat your oven to 180°C/350°F.
Cut the salami into small cubes and add them into a large bowl.
Add the almond flour, baking powder, and paprika powder to the bowl and mix thoroughly.
Add the remaining ingredients as well and mix until everything is well combined.
Place 6 cupcake liners into your muffin form and fill the batter into the cupcake liners.
Tip: You may want to use silicone cupcake liners, as those will prevent that the finished muffins stick to the paper cupcake liners.
Bake for 15 min in your preheated oven.
Let the muffins cool down a bit and enjoy them warm or cold - both ways taste great!
