You’re meeting up with friends and it’s absolutely beautiful and sunny outside.
They enjoy their ice cream cone, or cocktail, or milkshake and you’re fighting a battle in your mind if you should cheat and sacrifice your progress or if you should stay on track and torture yourself.
I was one of those people who started the ketogenic diet several times in the past but almost always fell of the wagon after a few weeks, exactly because of situations like that.
I definitely had my fair share of binge eating attacks and when I had to decide if I wanted to stay chubby and unhealthy or have my sugar treat I often opted for the sugar treat.
Well, now you can have both.
Go on, have your treat but you don’t have to feel crappy afterward because your blood sugar is crashing down after spiking through the roof.
Now you can enjoy a delicious and refreshing treat like this keto vanilla milkshake and your blood sugar (and insulin level) will stay right there where it’s supposed to be: unimpressed.
Apparently, I made it my mission to make keto easier for all of us.
I’m always INCREDIBLY humbled when I get comments saying that I’ve made keto easier for someone because I provided a viable alternative to a sugary treat but I also have selfish reasons for creating these recipes.
Since I started this blog I had such a huge incentive to create a keto version whenever I wanted to cheat and after about 100 recipes published here on hungry for inspiration I’m now at a point where I rarely crave anything but my own sweet recipes.
So, this keto vanilla milkshake goes out to all of you who have a big sweet tooth and still want to achieve their goals!

Just a heads up, there are actually two versions of this recipe which I want to share with you!
I like to call the first the “fancy” version that requires an extra step and a bit of waiting and a quick version for anyone who doesn’t want to go through an extra step and would rather like to have their keto vanilla milkshake ready in 5 minutes.
Both versions are absolutely delicious and I can recommend both, but I’d opt for the “fancy” version if you have the time and patience.
It just tastes a lot more delicate and like “the real deal” than the fast version but I also made the fast version several times whenever I wanted something sooner rather than later.
Just read trough the steps on the recipe card and decide for yourself which route you want to go!
KETO VANILLA MILKSHAKE INGREDIENTS:
This section is where I go a bit more in-depth about the ingredients you’ll need for this recipe. ☺️

unsweetened almond milk will be the base of our recipe.
Almond milk is incredibly low carb (Only about 0.2g/100g) and doesn’t have a strong taste of its own which makes it perfect for recipes like this.
I recommend adding heavy cream as well, as the contained fat enhances the flavor and makes the whole recipe feel more “milkshake-like”.
This only applies if you want to go the extra-step to make the “fancy” version of this recipe.
The vanilla pod is boiled to infuse your heavy cream with the vanilla flavor.
I personally absolutely prefer this variation as the natural vanilla flavor from the infused heavy cream is just different than vanilla flavored syrup sweetener or vanilla extract.
BUT I can totally understand that you want to save the time and effort to infuse your heavy cream and the fast version doesn’t require a vanilla pod.
Probably one of the few times in my life where I don’t recommend erythritol.
(If this is your first time on my blog you should know that I’m pretty religious about how much I love erythritol for my other sweet recipes).
But erythritol doesn’t solve well in water and is thus not well suited for this recipe.
It’ll just accumulate at the bottom and that’s not a good milkshake experience.
Instead, I recommend a liquid sweetener of your choice – everything you enjoy is fine here.
I personally don’t like liquid stevia as I’m one of those unfortunate souls who can taste the aftertaste pretty badly, so I went for a sucralose-based sweetener.
I also didn’t give any specific recommendations regarding the amounts needed of the liquid sweetener because they vary so much from brand to brand and sweetener to sweetener.
If you use a sucralose-based sweetener you probably only need a few drops whereas other products could require several tsp.
Read the recommendations on the backside of the specific product you’ll use to determine how much sweetener to use.
The amount you should use depends on what version you’ll make and also what sweetener you’ll use.
If you use a sugar-free vanilla syrup (which I recommend if you can get your hands on it) then you can add less of the vanilla extract depending on your personal taste.
KETO VANILLA MILKSHAKE RECIPE CARD:
Want something refreshing while on the ketogenic diet? This keto vanilla milkshake with only 2.8g net carbs and 5 ingredients is perfect for you!
Cut the vanilla pod in half.
Scrape out the seeds.
Add the heavy cream to a small non-sticking pot and add the vanilla seeds as well as the scraped out pod to the heavy cream.
Bring the heavy cream to a boil while constantly stirring.
☝︎ I recommend setting the heat to low-medium instead of high - this will reduce your chance of burning your heavy cream.
Remove the scraped out vanilla pods from the heavy cream and fill the infused heavy cream into a jar or mug.
Chill in your fridge until cold.
(Approx. 1 hour).
Add the vanilla-infused heavy cream and all of the remaining ingredients into a food processor and blend for approx. 30 sec.
☝︎ Make sure to not blend too long as the friction might warm up your milkshake and I think we can all agree that a warm milkshake doesn't sound like something we want!
