Prep Time5 minsCook Time10 minsTotal Time45 mins
Ingredients:
 7 tbsp cream cheese (3oz/90g)
 2 tbsp heavy cream (30ml)
2 tbsp powdered erythritol (approx. 12g)
 2.60 oz strawberries (100g)
Instructions:
1

Add the strawberries into a small non-sticking pot and cook them for approx. 10 min over low-medium heat until most of the water in the strawberries has evaporated.

This step is optional but will enhance the flavor of the final recipe, thus I highly recommend cooking your strawberries.

If you don't want strawberry chunks in your final cheesecake jar, puree the strawberries in a food processor or with a hand blender before proceeding to the next step.

2

Chill the cooked strawberries in your fridge while proceeding to the next step.

Add the cream cheese, heavy cream, powdered erythritol, and vanilla extract into a bowl.
