Who doesn’t love a filling, nutritious & family-friendly meal that’s ready in about 30 minutes?
If that sounds like something you’re interested in than keep reading because this keto coconut chicken curry combines all of those things.
It’s a long time favorite of mine and I made it countless times over the last couple of years.
At first, keto curry sounds like an oxymoron – how can something that’s notoriously carb heavy like curry be keto-friendly?
Well, with the right adjustments and ingredients it’s possible!
Rice becomes cauliflower rice, low carb vegetables instead of high carb ones and carbs are diligently calculated.

KETO COCONUT CHICKEN CURRY INGREDIENTS:

I know that high-quality meat can be very expensive, but I highly recommend going for it if you can!
The quality of the meat truly does make a difference in meat-heavy recipes like this one.
You can add other vegetables as well or swap the bell pepper & broccoli for other kinds, just be sure to keep their carb content in mind.
I for example like to add a small amount of carrot (& cashews – not a vegetable, I know ????) as well, but I listed it as optional as it does increase the carb count!
You can also eat the keto coconut chicken curry without the cauliflower rice (it’ll reduce the carbs) but it’ll probably satisfy you more and longer if you serve it with cauliflower rice.
You don’t have to buy it somewhere for an expensive price, cauliflower rice is super easy to make yourself!
I’ve described the process in the instructions as well.
HOW TO MAKE KETO COCONUT CHICKEN CURRY:

Peel and chop your onion, garlic, and ginger.
Cut your chicken breast or fillet into bite-sized pieces.
Chop the bell pepper and broccoli as well.
Add the chopped onion, garlic, ginger and a bit of cooking oil into a large frying pan and fry on high heat for 2-3 minutes until translucent.
Add the chicken to the pan as well and fry for 1-2 minutes from all sides.
Add the curry paste and fry it too for approx. 1 min.
Deglaze everything with coconut milk.
Add the chopped bell pepper & broccoli as well.
Stir.
Season with chicken masala spice mix, curry powder, coriander powder, and salt and pepper.
Reduce the heat and cook for approx. 20 minutes on low to medium heat.
While the curry is simmering, prepare the cauliflower rice:
Remove the florets from your cauliflower head and chop them roughly.
Add them into a food processor and blend for 30-45 seconds or until no big chunks of cauliflower are left.
Add the raw cauliflower rice into a large frying pan.
Add 1-2 tbsp of ghee or a heat resistant cooking oil and fry on medium-high for approx. 5 minutes.
Make sure to stir the cauliflower rice!
Add salt to taste.
Serve the keto coconut chicken curry with one serving of cauliflower rice.
This recipe is great for meal prepping as it keeps fresh for up to 5 days.
I'd recommend storing the cauliflower rice and the keto curry separately to avoid any sogginess creeping in.
Store in your fridge in a suitable air-tight container.
