Doesn’t seem to be the best place to be for someone on the ketogenic diet, right?
Well, the German kitchen also isn’t known for it’s suitability for the low carb diet, but it still contains a few gems like this Low Carb German Leek & Cheese Soup!
This low carb egg drop soup called “Stracciatella alla romana” is Italys’ gift for anyone who is on the ketogenic diet and can get excited about an easy soup recipe that takes only 15 minutes.

“Stracciatella alla romana” is traditionally served at the start of Easter lunches and may have originated as early as the 15th century (Thank you Wikipedia!).
Something that’s been around this long must be pretty great.
The soup is usually served with white bread but we all know we’re going to skip that.
Because of its’ high volume and high protein content, it’s pretty filling even though it doesn’t contain a lot of calories!
So it may not be the best meal to choose if you practice OMAD (One meal a day) but everyone else who wants a quick and easy meal without a lot of hassle will have a blast with this recipe!

KETO ITALIAN EGG DROP SOUP INGREDIENTS:
This section is where I’ll explain a few things about the ingredients needed for this recipe as well as tips + suggestions!

Choose whatever you personally prefer! Both taste great!
You can also experiment with this super basic recipe and add other vegetables like baby spinach as well!

HOW TO MAKE “STRACCIATELLA ALLA ROMANA” (ITALIAN EGG DROP SOUP):
The ketogenic diet and this Italian Egg drop soup called Stracciatella alla romana are a match made in heaven! Filling, delicious and super low carb with only 1.4g net carbs per serving!

Add the eggs, parmesan, parsley, salt, pepper, nutmeg and two tbsp of cold broth into a bowl and whisk.
Add the broth to a large pot and bring it to a boil.
Turn off the heat once the broth is boiling and stir the soup in a circular motion (creating a "whirl").
Keep stirring while you slowly drizzle the egg mixture into the soup.
Whisk the soup until the eggs form "little shreds".
This soup is usually served with a piece of white bread, but you know as well as I do that we're going to skip that part.
It tastes amazing just as it is.
