Recently I’ve been craving something that tasted like Stracciatella gelato.
But in my research for this recipe, I discovered that the ice cream flavor “Stracciatella” isn’t a thing at all in the US.
Most of you guys probably don’t even know what I’m talking about and what this recipe is supposed to taste like.
Well, let me explain.
Stracciatella is one of the most popular ice cream flavors after basic flavors like vanilla & chocolate here in Germany and I’m guessing in other parts of Europe as well.
And even though the name sounds fancy, it’s basically the equivalent to chocolate chip ice cream.
Not so fancy after all.
“Stracciatella” is the name of a popular Italian Egg drop soup (Recipe here) and yes: those two have a connection.
(An egg drop soup is probably NOT what you want to think about when you’re enjoying a delicious dessert! ????)
Stracciatella means something like “little shreds” and just as the eggs in the egg drop soup look like “little shreds”, the very thin chocolate chips or flakes in the ice cream also look like “little shreds”.
Apparently, the ice cream stracciatella version was invented by a chef in northern Italy who was tired of stirring eggs into broth all day.
Definitely a connection you wouldn’t expect, but hey:
this can be your weird little anecdote to tell at your next dinner party to make it seem like you’re very sophisticated and know stuff about Italian soup and ice cream makers.
Well, this recipe is my attempt of bringing Straciatella gelato into my keto-friendly kitchen and this chocolate chip & mascarpone mousse is the result.
(Spoiler: It’s good.)

KETO CHOCOLATE CHIP MASCARPONE MOUSSE INGREDIENTS:
This is the part where I’m sharing a few of my suggestions and tips for the ingredients you’ll need for this recipe!
You can find the exact amounts needed on the recipe card at the end of this post!
You can also use cream cheese but I personally prefer using mascarpone cheese.
Both are kinds of cream cheese but in my opinion, mascarpone cheese tastes “richer” and goes better with the chocolate chips.
I had to do a LOT of digging to find thin chocolate chips that had a high cacao content (with only a small amount of sugar).
“Normal” sugar-free chocolate chips are easy to find but those don’t work very well in this recipe.
They’re too thick and I don’t recommend going for them if you can’t find thin chocolate chips with a high cacao content.
Instead, I recommend grating “normal” sugar-free chocolate into flakes.
This will keep the mousse fluffy and delicate.
in my opinion, the BEST keto-friendly sweetener.
– it doesn’t spike your blood sugar,
– it’s completely safe and
– has a very fresh & natural sweet taste.
Because of it’s natural origin and natural production process (fermentation by a certain kind of yeast) I also consider erythritol to be paleo-friendly!
Even though I’m a bit biased towards erythritol, you can use other keto-friendly sweeteners that won’t spike your blood sugar as well, but be aware that you may have to add more or less sweetener if you do so.
Erythritol is about 70% as sweet as sugar whereas other keto-friendly sweeteners like monk fruit and stevia are much sweeter than sugar.
Keep that ratio in mind and adjust accordingly.
HOW TO MAKE KETO CHOCOLATE CHIP MASCARPONE MOUSSE:
Satisfy your sweet cravings with this delicious and easy 3-ingredients chocolate chip and mascarpone mousse inspired by the Italian ice cream flavor Stracciatella!
If you can't find thin sugar-free/very dark chocolate chips, grate your sugar-free chocolate bar until you have the needed amount.
Mix all of the ingredients in a bowl and transfer the mass into two small jars or one bigger jar.
Chill in your fridge for 30 minutes before serving it!
Enjoy!

How do you include Erythritol in your calculations?
The short answer is: I don’t, and I can tell you why.
Erythritol is a sugar alcohol which your body can’t digest.
If you ingest it, it won’t spike your blood sugar & it won’t release insulin (which is a good thing if you want to stay in ketosis).
It passes through our system basically “untouched”.
Because of this you can subtract the carbs from erythritol completely, which is what I always do.

I found the jars at a local dollar store here in Germany.
They are cheaper replicas of Weck tulip jars. Maybe you can find a cheaper version in a home depot store somewhere near you, or you can still go for the “original” Weck jars on Amazon.

Do you use the confectioners type of erythritol, and if so do you feel it could be used interchangeably for the granulated version? I’ve heard several people complain of the graininess that the granules leave in the food.

I think it depends on what recipe you want to make.
In some recipes it doesn’t really matter if you use the confectioners type or the granulated type (at least in my opinion) but some are better suited for one or the other.
I think this recipe goes really well with the granulated Erythritol and I don’t mind the “graininess” at all but if you think that may be something that could bother you you could definitely also use powdered Erythritol. 🙂
