With our low carb Köttbullar recipe that’s no longer a problem, because one serving has just 2.8g of net carbs!

The dish is great for the whole family, super easy to prepare in just 30 minutes and of course, the meatballs are also keto-friendly!

Tip: If you want the Köttbullar to be a little closer to the original, serve them with a small portion of our sugar-free keto cranberry sauce!

  • xanthan gum
    Xanthan gum acts as a keto-friendly thickening agent and will make your cookies softer and chewy (just as cookies should be, in my humble opinion!)

    You don’t have to use xanthan gum, you can also use guar gum and locust bean gum in the same ratio. (Depending on what’s easier to find in your region.)

    HOW TO MAKE THE KETO SWEDISH MEATBALLS:

    Ingredients for the meatballs:
     1 lb ground beef (450g)
     1 shallot
     1 egg
     ½ tsp salt
      tsp pepper
    Ingredients for the sauce:
     1 ½ cups water (13.5 fl oz/400ml)
     ¾ cup heavy cream (6.8 fl oz/200ml)
     2 tsp beef bouillon
     1 tsp allspice
     ½ tsp xanthan gum
      tsp pepper

    1

    Finely dice the shallot and place it in a large bowl with the rest of the ingredients for the meatballs.

    Mix everything thoroughly with your hands and form about 24 meatballs of equal size.

    Heat some butter or ghee in a large frying pan and add the meatballs.

    Fry the meatballs for about 10 minutes on all sides.

    Prepare the beef broth by dissolving the teaspoons of beef broth in hot water and deglaze the meatballs with the broth.

    Add the cream and let everything simmer for about 10 more minutes.

    Season the sauce with a little allspice and pepper.

    ☝︎ The beef broth already contains a lot of salt, so you probably don't need to add any additional salt to the sauce.

    If you want your sauce to be a little thicker, you can thicken it with some xanthan gum.

    Put about 1-2 tbsp of your sauce in a separate bowl and add the xanthan gum to the bowl as well.

    Mix the small amount of sauce with the xanthan gum and then add it back to the rest of the sauce.

    Mix again until the remaining sauce has thickened.

    Serve your keto Köttbullar with keto cauliflower mashed potatoes and - if you like it a bit more classic - a tablespoon of our keto cranberry sauce.
     

    Storage:

    Store the keto swedish meatballs in an air-tight container in your fridge and consume them within 3 days.
